A fully charged hanzo shot does 125 dmg, thus it won't oneshot a Tracer unless it is a headshot (tracer has 150 life).
Scattershot on the other hand shoots 5 arrows which do 75 damage per arrow and 125 per unscattered arrow. The arrows also bounce up to 5 times. Thus if you get hit by multiple arrows it will kill you.

McCree is good offense and defense. He can put out a lot of damage with his secondary-attack / Combat-Roll / secondary-attack kombo (combat roll reloads the ammo). The effectiveness of the ultimate depends on the map-layout, also a Reinhardt in the enemy team can be a problem, since it blocks his ultimate.

When the enemy picks 6 of the same hero you can counter them quite easily, since all heroes have quite a strong counter hero. It gets a bit harder if for example they have 2 reinhardts and 4 soldiers.

Zenyatta's orb of discord is removed when you lose sight for 3 seconds (in the first beta I believe this was not the case). Also some abilities which provide invulnerable remove the orb.

Other than that it's just practice. Try to play a lot of different heroes in order to get a feel for the strength and weekness of each hero.

I've used https://play.google.com/store/apps/details?id=com.innovaptor.ginfo.overwatch since beta as a reference for stats and damage numbers and stuff, and they keep up with updates and show patch notes in-app. You can also put in your battle tag and it will show your quick play and competitive play stats
Sometimes it may be better to use the secondary attack of Shuriken since it is easier to hit something, especially on close range.
Also never forget that deflect can be used on nearly everything (not on junkrats ultimate though, I learned that one the hard way).

Nice writeup. May I ask if we could use some parts in our apps? We have recently updated our Ginfo for Overwatch apps (iOS, Android) with a strategy/tips section for each hero but more information is always better.
PS.: The iOS update which includes the tips is still in review, so it may take some time until it is public.
Bastion/Torbjörn in combination with a Reinhardt can be a strong defense, but soldier and mccree are also (generally) good options.
