For anyone else interested. It can be a bit clunky but has always worked well once you get the hang of it.

As far as binding your controls to be read as touch inputs, you could use an app like this
There are many of those apps out there, however the ones that I've seen require your phone to be rooted.
N64oid will let you used mapped buttons and on screen buttons at the same time.

If you have root, I recommend you use GKM Touch when you find yourself wanting to map touch controls for a game that doesn't support gamepad, it works like a charm.
Because of your lack of windows, I'm not sure if there is a way to just root, but there should be indeed. You could always go with a virtual machine like I said. Maybe have a look there?

As for the N64 and ICS, the touchpads are indeed only working in ICS on N64oid, but not with mupen. The problem is that although the touchpad works, they also generate lag and the O button functions as a back button no matter what you map it to, so it's a bit annoying. I personally prefer to use this app instead and stay on GB:

that lets you map the touchpads to areas of the screen, and so it bridges the gap.

Before you buy, it requires root. With it you can map touch controls to your input method
