There are only two app lockers you should be using, otherwise, they're simply a waste of time. Maxlock or the app locker built into CyanogenMod/LineageOS. Anything else is essentially useless.
For best app locker, Maxlock has no competition, it doesn't run on the background, so it can't be killed or tricked. It doesn't even have a process in the background so no battery usage. But you need xposed to use it
Try Maxlock or Padlock. Those are the only two recent ones I could find that are open source. There's also one by toolwiz but it's outdated and has ads.

Maxlock Although it requires root and the xposed framework to work reliably and to not be easily unistallable. But it's the best there is.

you can password protect apps (gallery, google+, file browser, etc...)
maxlock is the most efficient way to do this, but requires xposed framework. other options require a permanent background service.
i have checked MaxLock - Xposed app locker and it prevents me from uninstall even in safe mode

Try MaxLock from the playstore. Works better than MIUI app lock in my opinion.
PS: You don't need Xposed like the playstore says, you just need to give accessibility permission

There used to be an app called "Padlock" but the developer took it off the playstore. Worked great for me. You can still find the apk online though. Its on apkpure.
There's tons of ways to lock access to apps using Tasker or plugins but the Catch 22 is that all of those options are reactive and so the speed of the locking dialogue upon an app launch, is dictated by several factors and therefore may or may not show up quickly enough for your desires as you may end up seeing the app for a split second.
If you are open to exploring different launchers, there are some that have app locks built in which would prevent seeing the app first or you can use Tasker's AutoTools to create your own launcher. Also, Lightning Launcher has Tasker support.
Unfortunately, such is the design of Android, all of the above will only prevent access to a casual user and anyone who's more advanced, would still be able to gain access to your apps using 'back doors.'
To remedy this issue, one needs to hook into the app launch at the lowest possible level which is achievable using xposed which I personally use along with the module Maxlock. This gives me fingerprint and pin security prior to the app launching.
Do you mind me asking why you have decided to not have any phone access security especially when outside of your trusted places?
maxlock, requires xposed though. the big advantage of maxlock is it doesn't require an always running background process. ML is event driven, so when a secured app is launched maxlock is then called to action. all those background processes add up and can slow the device down as CPU cycles and ram are tied up.

sidebar - go check running processes under dev options after a fresh boot and see what's running, you might find that a lot of apps you assumed were dormant are actually running for no good reason.
