I use my stock android player.
For audiobooks I use this

Neither can access Audible files, but do play every file I rip.
MortPlayer also lets you choose your music folder(s). And it's damn nice, it really feels like a folder driven player - reminds me of Winamp.
>1.) I'm not picky on the music player app, but it's annoying having to take my phone out to control music. Double tap to skip, triple tap to skip back/rewind, volume up and volume down. Four simple controls that just doesn't comply with any phone or app.
I have an answer to your first question. I use the Samsung ear buds with the three button control with Mort Music Player to do what you've described: double tap for next track, triple tap for previous. In addition, I can single tap for pause or hold for stop. Mort has configuration for four and five tap options as well.

Copy your mp3 files in the Music folder, or any other folder in the Internal storage or sd card (if you have one), you can have a nice folder structure, albums, bands, as you like. When you have all your music there, use Mort music player to play the files, it's a great app, I tried several but i'm very happy with this one.

If you dont like Mort, try Poweramp, thats good too.
One more hint, you can copy music files or any other files from PC to your phone, locally, over wifi, using this app, no more stupid cables! :-)

If you need to copy / move files arround, on your phone, use fx file explorer.
In office, YouTube and RadioCity Indipop mainly. Sometimes Saavn or SoundCloud (chiefly for Anime tracks).
At home, all of the music I like is offline and most of it is MP3 (except some old tracks ripped from cassettes). I use foobar2000 or ncmpcpp to listen to it.
When travelling, the good ol' copy-to-SD card and listen via MortPlayer to listen to it on the phone.
No fancy library management, simple folders-as-albums setup and a bunch of m3u playlists with relative paths. :)
Yes, check MortPlayer Music : https://play.google.com/store/apps/details?id=de.stohelit.folderplayer
