This might be a bit TMI, but while on your period is really hit and miss. Depending on your flow and what you use (tampons, pad, cup) can make exercise really uncomfortable. If your wife goes to a public gym, tampons/cups/pads can leak; you can see the pad outline in tighter clothes. All are embarrassing. Think about lifting with a runny nose, that's what it's like to lift when you're on your period. Except, you can't wipe your nose. I typically skip the gym the first and second day of my period as that's when it's the heaviest and has the highest probability of leakage. (This means: spandex + any significant weight deadlifts/squats + period = no good)
Exercising around the actual period is great though. If I don't, I get cramps and just don't feel well. The frustrating bit is that some months I'll have normal energy, or lots of energy or no energy. I haven't been able to pin point what causes it and it's really obnoxious as it really interferes with my workout. My diet is good, but I think I need to add carbs in during one of the phases (I eat mostly protein + fat) which will help with energy, strength and the cravings.

For PMS, which I have lots of (emotional, physical), taking vitex has been an absolute godsend. I take one in the morning and one at night starting at my ovulation and ending on my first predicted period day. (So 14 capsules in total each month.)
I've been using period tracker deluxe for the last seven or so years and it's very accurate and helps settle me when I get emotional (calm down, you're just pmsing).

Are you tracking your period? If not, do so. I'm guessing a lot of your emotional instability has to do with your cycle. The period tracker I use is Period Tracker Deluxe

I pick too and what I found has helped me greatly is no lights in the bathroom. When I go into the bathroom, I just leave the door open and let the hallway light be my light. I also use candles when I shower and have to close the door. I also wear glasses so I always take my glasses off when I'm in the bathroom or near mirrors.
Depending on your situation, you can cover up your mirror and use just a hand mirror if you need to apply makeup.
I have a copper IUD too and my back broke out like no tomorrow when I got it. I take one zinc capsule a day which has help with breakouts. I also take vitex during my ovulation (one in the morning, one at night) which has helped with hormonal acne as well as PMS. Get a period tracker, like p tracker if you don't have one already, to track your ovulation. Both products are inexpensive, under $10, and will last a few months.

Do you do any self reflection on your emotions? Do you know why you're anxious? Triggers such as being a small child and losing your mom in the store can cause issues in adulthood. Knowing and identifying what causes the emotions is a step in being able to control them.
At 23, I was similar - very needy and clingy because I had past traumas that I hadn't been able to deal with. I needed someone to hold my hand constantly and if they deviated from Fantasy Them, I went into total melt down. Now, ten+ years later, I've managed to deal with my emotions and don't fly off the handle. Tracking my period with a period tracker has also made a huge difference.

Do you track your period? Not only do I have monthly cycles, but they fluctuate throughout the year. Always fun! Having a tracker really helps me figure out if it's hormones or something else. (Surprise, it's usually hormones.)
Perhaps watch some old, 1950's movies with women and see how they deal with situations. Rear Window is a good movie which has the stunning Grace Kelly. The Ghost and Mrs. Muir has Gene Tierney and, to me, showcases exactly what a strong independent woman could be. (It's a beautiful story, but be warned, tears could be had!) Something newer, I really enjoyed Miss Pettigrew Lives for a Day.
