Might be a bit late here, but I stumbled on this post as I was reminiscing about our honeymoon and thought I’d throw out some suggestions with pros and cons based on our stays. My wife and I's mindset was similar to yours -- we wanted to see all of Maui, but didn't want to exhaust ourselves running around too much. We also wanted to spend a good amount of time relaxing (beach/pool/etc.). We spent a lot of time looking for resorts and finally decided rather than just staying in one place, we'd move around a bit and stay at several resorts. This worked out great because we got to stay in different places and see different parts of the island without straying too far away from where we were at. We stayed a bit longer than you are aiming for (11 days) but we could have made it work with 7.
When we first arrived we decided to stay at the Royal Lahaina and we both agreed that we were very happy that we went to this part of the island first. This area (specifically the beach/views) was exactly what my wife and I envisioned when we fantasized about going to Maui. Here's a picture from our balcony at the Royal Lahaina. We ended up staying four nights here and really enjoyed it.

Final note on this hotel - I travel a lot for work and saved up a bunch of miles for our honeymoon. Part of the reason we chose this hotel was because I was able to use my miles for this stay here. There are a lot of other hotels around, but we actually really enjoyed this one even though we chose it because it accepted miles. I would definitely try to stay in this area at any of the surrounding properties.
After, we drove down to Makena/Wailea and stayed at the Makena Beach and Golf Resort. This is much more secluded, but it is an older property. That being said, we probably had the most fun here because they offered tons of activities and events at no additional cost, which was great. They offer free beach rentals (chairs/umbrellas/snorkeling gear) and several other activities - we went on a guided canoe tour, guided snorkeling tour, a sunset sail, just to name a few things, all at no extra cost. The beach here, while still beautiful, was a lot smaller and more compact. The big bonus at this beach was there are dozens of sea turtles swimming around near the shore. You will see them popup all over the place and it was a really amazing experience.

When we checked out from here, we took the road to Hana stopping along the way (highly recommend the GyPSy Hana Tour App if you decide to go to Hana). We finish the road to Hana and bunkered in for our final nights at the Travaasa Hana. This place is absolutely gorgeous and is probably the definition of being secluded/away from it all. The grounds are wonderful and was a great final stop for us before we left. They have an amazing heated infinity pool that overlooks the ocean. You can also rent bikes and ride around the town to take it all in.

This ended up being longer than I thought, but like I said, I came here reminiscing so it was nice to go back and think of all the fun we had. Moral of the story I guess it that you should have a great time wherever you go.
