Overall if you are trying for a Casino Royale style set piece, I would mostly go for narrative rules rather than actually play the game unless you or your PCs are really keen on blackjack, poker etc. In this sense the FFG rules for Sabacc work just as well for Pazaak. Some way of keeping track of the amount being bid and possibly using big bids as mechanical ways to intimidate or bluff for bonuses It's more about the use of perception, skulduggery, cool and other social skills than it is about the mechanics. (Arguably true for real card games too!)
