I just use a cheapy bluetooth OBD dongle, Torque and Trackrecorder, well.......on the rare occasion my bike isn't on stands in the garage being fiddled with

So Wi-Fi, GPS. Nothing about how it connects to the car or if it requires a BLE ODB2 dongle.
If you want something similar in an unsupported car, Torque uses a BLE ODB2 dongle for data and has a track recorder plugin.
