I can't answer the first question about why it's not going beyond "1 of 805" (maybe your first file is a giant video?) but the second is easy:
It's a backup in that all the images are being copied over to Google's photo service ("the cloud"). So now you have the photos in two places: Your phone and in the cloud. In other words they are taking up space both on your phone and on Google's server.
They will not be deleted from the cloud unless you select them in the Google Photos app and choose to delete them AND then delete them from your Google Photos Trash bin.
So what you want to do is delete them from your phone but not until AFTER they've been backup up by Google Photos. Open your gallery app (not Google Photos) and delete everything. That will delete them from your device, Google Photos will be unaffected. You can still browse all you pics from the Google Photos app.

There is also some with more advanced features, like an on-screen joystick that is displayed even in other apps, but I haven't installed or tried any because I play Ingress (a Pokémon-Go like game) and I don't want to be banned if the game detect this kind of app on my phone.
I guess you already know how to select a fake location app in the developer's settings? If not, it's probably explained in the apps.

I've been using SMS Backup + (https://play.google.com/store/apps/details?id=com.zegoggles.smssync) for some time and have been pleased. Messages and phone logs are stored to one's Google account. May be worth checking out.

I find it silly to make a feature like this available for one platform but not the other. However, Dencil did state that "if formatting text was possible, it would come from a keyboard app instead of Hangouts." So if you can find a keyboard in the Play Store that can format the text in ways you want, get that! :)
One keyboard I've used before that can do this is MultiLing Keyboard. I don't use it anymore because it has so many customization options that it's actually kind of overwhelming... Others may like it though.

MinMinGuard is an excellent one. It even removes the space created for the ad.
I don't think there's a version that won't run without Xposed, which as far as I know, is a bitch to use on anything higher than KitKat (I'm on 4.4.4) last time I checked on it.

It really comes down to what you want to trust and how vigilant you are in keeping track of access to your stuff. You're basically giving Intuit your online bank credentials and trusting them to keep them safe. They are a reputable company who has been around since the start of the internet. You might also know their products Quicken, Quickbooks, and TurboTax. They're whole company is based on keeping people's financial information secure. A breech there would destroy the whole thing. They take security VERY seriously and have to comply with government mandated protocols, which, given their reliance on being secure, they likely try to surpass.
It is an increased risk, though. So it does just depend on your level of comfort. For me, and many others, the increased amount of convenience is worth it for the very slight increased risk to my personal information.
Also, as it says in the link I provided, Mint is a read only service. If someone were to gain access to your mint account, they'd only be able to see data on your accounts, not actually take the money through Mint.

Nowadays, if you are logged into a Google account, and then log in again after u locking the phone, you should have your contacts, messages, and apps saved and reinstalled (tho it won't restore apps settings). Make sure you are logged in a Google account and that everything is synced in your phone's settings, in "Accounts" or in "System" then "Backups" (this is on AOSP, I don't know how it is on MiUi/EmUi/One UI etc).
Apps that you previously installed should Reinstall, but without their data (you will have to login in social media apps and may lose progress on games for example).
Yes, the easiest way for your photos is to backup them in a computer. But keep in mind that unlocking the phone to install a recovery and root access should not erase the internal storage, so your photos, downloads, music, etc should still be there. But do a backup just in case.
I don't think there is other things to save. Just check in the Contact app that your contacts are saved in your Google account and not your phone, else they won't be saved.

ACR records locally, but also syncs to the cloud. Would that work? The app itself is great for recording calls, and they update it when the OS changes. For example, it was working, then one day it would only record the other caller. In about a week they had an update that fixed it so both callers were being recorded again.
Unfortunately it would only show the original battery capacity. Try usingAccubattery for a week or so and it'll calculate the actual capacity of your current battery.
