A good one for beginner's is Vasant and Usha Lad's Ayurvedic Cooking for Self Healing. I especially like the fact that the fist few chapters explain the principles of Ayurveda in very easy to understand terms AND it has food lists in the back that show which are better for Vata, Pitta or Kapha. I recommend this to clients early in their treatment plan.

It outlines an easy to implement Ayurvedic life style that helps you know based on your Prakruti/Vikruti what time to get up in the morning, what times of the day are best to eat, what to eat and when to go to bed based on your doshas. Nothing extreme as Ayurveda always takes the Middle Path. If you follow these practices daily without fail, you will build Ojas and herpes outbreaks will be at a minimum. Triphala powder or capsules will help you a lot. Triphala may take up to a month to work until you figure out your best dosage. Perhaps some ashwagandha too to relax the gut to make it easier to defecate.
Mix 1 teaspoon or 1 tablespoon of psyllium powder (isabgol) (cheaper to buy in bulk) with 1 tsp or 1 tbsp of food-grade diatomaceous earth in a large glass of water or other beverage. You can use chia seeds instead of psyllium if you prefer.

The best book out for beginners is Ram Rao's Good Living Practices. I recommend it to my clients ALL THE TIME. The other book I recommend is Dr. and Usha Lad's Ayurvedic cooking for Self Healing. The first 7 chapters (~50 pages) is all about Ayurveda, doshas and Prakruti/Vikruti however, Ram Rao's book is the best IMHO.
