I use Erythritol since 7 years. I used to drink 3 or 4 cups of chai a day with a teaspoon of sugar each, but now have switched to 2 or 3 small cups of chai with a teaspoon of erythritol. It has a very small difference to the taste of sugar. Leaves no aftertaste. You cannot even feel the difference when I drink it in coffee or have it with yogurt.
I buy this one: https://www.amazon.in/So-Natural-Sweetener-Erythritol-Diabetic/dp/B083TYPGW4
I have tried Stevia, but for me the aftertaste is terrible. You should try both and see which you like, as it differs for everyone.
Been using this for coffees and lemonades, and have had good luck.

Vitamin C isn't a problem. Fish oil should also be okay because I usually eat up 1-1.5 mackerels everyday :p And a multivitamin tablet as well, which I hope covers up deficiencies for Vitamin D and some minerals. Will take a look at Mg malate via Amazon.
Edit: Checked out Magnesium Malate and came up with this product - http://www.amazon.in/Source-Naturals-Magnesium-Malate-Tablets/dp/B000GFJJKQ So basically have to take 3 pills/day to hit the RDA of 400mg?
