Not sure about fire stick but on Android TV you can now go in and choose new themes and change what you see on your menu's. If its not in your Emby settings on device you can login to Emby.media and click your profile icon then choose display and home screen to make changes. I personally like the Apple TV theme

Your only option would be to use something like Hamachi (which I haven't used in years so I can't vouch for it) or using SSH tunneling
