From the EteSync FAQ:
"Exporting your data is easy! Either setup EteSync-DAV and use the web UI for a full export of your data, or use an Android app that supports exporting, such as Google Contacts and Calendar Import - Export. Additionally, you can just download the data as we have it, in raw form (encrypted), by accessing the browsable API explorer and downloading the parts that you'd like exported."
EteSync is end-to-end encrypted and has no idea what the data contains. This means that even if we wanted (we don't) we can't limit associate accounts this way. There must be something else going on.

This would be an improvement over Standard Notes that integrates Coinpayments. I would actively promote Etesync within the Monero community if the option becomes available

The new GNOME integration uses the same mechanisms as the DAV bridge, so if one doesn't work, so won't the other. Though both of them should work.
I've asked the GNOME developers about it, let's see what they say.
Edit: I briefly checked the source code, and it looks like it should. Are you sure the DAV bridge doesn't work? Maybe something special needs to be done? Maybe we can ask the GNOME devs.

You can turn iCloud off just for contacts, calendars and tasks, and then you'll have local accounts you can use with EteSync.

Maybe the easiest way is to export to file, remove the unwanted contacts and then re-import. The app's UI only support reverting single items at the moment.
I'll take a look into adding a notice about import importing everything so no one else gets bitten by this.

Not a dumb question. EteSync works by integrating tightly with your operating system, so for example, it feels exactly like a Google account on Android. So it syncs with mailbox.org, the same way that a Google account would. We have no ability to sync with mailbox's proprietary system so that the etesync contacts shown on the web mail interface. This is the longer version of what u/bigsmily said.
Syncing with mailbox.org means your data is not end-to-end encrypted, and thus not really secure. This defeats the purpose of using EteSync.
I've been using Quire for a few years now.
It has the website version along with the mobile app. It provides features such as kanban board, offline syncing, reminders, priorities, gantt chart...etc
