I think you’re going to love it either way. It will be a different flavor but you’ll have a great experience! I would maybe recommend to try to keep your schedule flexible in case you want to insert some random activity that catches your eye and I am non-sarcastically suggesting you pack compression tape. You’re going to be walking a lot and even if your joints are fine after a ton of walking, you don’t want a weird rolled ankle or maybe falling on a knee due to rainy cobble stone steps slowing you. Trust me on this one. There’s a ton of pharmacies in most cities now that I think of it, if you don’t pack it, though haha.

From my understanding things like phone chargers are ok with just adapters, but something like a hair dryer would need a voltage converter.
When I traveled I brought this power strip. Used that to charge iPhone, Apple Watch and iPad my whole trip no issues.

Tmobile will also give you a temp unlock if you need it. Pop your tmobile sim into an old phone if you want to continue receiving texts while abroad since they have free global text and really slow data.
Going to Europe with a kid in a stroller is like having a golden ticket. Boarding the plane first, being ushered to the front of the line everywhere, people eager to help if you need it. We've been moved to the front of the line at the Louvre, the Vatican, Tower of London, Rijksmuseum, among many others. So, always be on the lookout for those opportunities. You probably already have something given you've been travelling around the US but having a lightweight, functional stroller is essential. I personally like the Maclarens for being compact and lightweight but fully functional including having a full recline for nap times on the go. They're kind of expensive but usually easy to find used on Craigslist or FB Marketplace. Being a British company, they even make full rain enclosures for them, which have come in handy for us traveling in Europe in the winter months.

Congrats on the fun trip and pending proposal. I don't have any info on the DSLR, but I packed for two weeks in Amsterdam last January in this backpack.
I am a person who is ALWAYS cold, so I put a lot of thought into the clothing to take, and I was pleasantly warm enough the whole trip. I will be going for four weeks again this winter, and will be packing almost exactly the same stuff.
