Looks like you have an incorrect host name. Check the URI that jupyter gave you when you started the notebook server. Make sure VS Code matches the host name, port and token returned from jupyter.

You can create a Jupyter Notebook by running the Python: Create Blank New Jupyter Notebook command from the Command Palette (Ctrl+Shift+P) or by creating a new .ipynb file in your workspace.
With Mac OS, I highly recommend using a virtual environment for your Jupyter Lab setup. Mac OS is usually behind the times with Python as well. So, I recommend using Home Brew for installing the latest Python kernel, and then setting a virtual environment for Jupyter (or any Python development for that matter).

Not a direct answer but may interest you:
I use docker to run Jupyter using the pre-built images. After installing docker you can run a single command to download and run a pre-configured Jupyter image. No need to install anaconda, jupyter or any dependencies. It's all set up for you.
Docker runs self contained images, they can be thought of as lightweight virtual machines, which contain everything you need to run Jupyter etc. The advantage of this is the exact same environment can be run on windows, mac & Linux and doesn't require you to install apps and dependencies.
So I could just download jupyter off of (https://jupyter.org/install.html) and I should be able to run it fine? Sorry, not familiar with M1 so I just want to make sure before I do anything.
Have you tried installing Anaconda? It has both Jupiter notebooks and R Studio. Not sure if it’s what you’re looking for but it’s well documented and easy to use and free for students/individuals. https://www.anaconda.com
Start with the Anaconda distribution install. Download and run the installer at https://www.anaconda.com/distribution/#download-section.
Next, install R (download installer from CRAN) and install the IRkernel package using the directions here: https://irkernel.github.io/installation/ . Make sure you start R from Terminal.app.
I don't bother with Anaconda Navigator as it has been a mixed bag (sometimes it won't launch, sometimes is slow, etc). Instead, just launch jupyter by enteringjupyter lab
in Terminal.app.
