At my school we use Anatomy and Physiology by Derrick and Tortora. Encompasses almost everything you need to know for basic anatomy and physiology as you might guess. It's quite lengthy; around 1300 pages.
Hey I was in the same scenario as you. I would recommend thinking outside the box and looking at companies that are doing things that are health related and trying to think if you could fit within a position at the company. You said you have some experience in sales which is an asset that you can leverage. You have to think of yourself as a health professional with business skills.
For example What's a cool new health device that is growing and I might be interested in working for. FitBit came to mind because they are growing. So i punched them in google. Pretty much every company has a careers section at the bottom of their website to look at. On the FitBit website and found the title of Jr sales analyst. They said they're looking for new grads. Now you might be slightly under qualified on paper for this position but if you contact them well and interview with passion I'm sure you could get that job. Especially at these entrance level positions where a lot won't be expected of you if you drive hard and make an effort to learn about what you don't know you'll be fine.
Now there's the whole issue of them being in San Francisco and I'm not sure your location or if you're willing to move. But Silicon Valley sounds pretty good to me compared to this winter I'm having in Canada right now.
