There are lots of water bottle friendly “feed” bags made for handlebar mounting on bicycles. That would give you a ready made with all the structure you need.
Then it’s the process of sewing that to the side of the bag. An upholsterer or shoe repair shop may be able to attach it for you. If I was going to try myself, I would get a sailmaker’s palm (W Smith & Sons Sailmakers Sail Repair Kit - Right Handed https://www.amazon.com/dp/B016UU5E2W) to push the needle through the tough fabrics. You might pull it off with vice grips too. Fortunately, you won’t see the stitching when done.

An interesting query. Personally I haven’t have much experience with too many bags, but I am positive that I want a clamshell opening bag. Only that I’m not sure if it's the “traditional” style, or try ones that expand to back when the zipper is at the top, like this.
Definitely would love some lashing / attachment points inside the main compartment. Maybe MOLLE like in goruck bags, or the ones like in tom bihn's everything.
Or maybe the whole inside of the main compartment to be soft side of velcro. That way I can just stick anything in it for semi strong adhesion. Would suck to tear it off though.
Otherwise a clean look outside, and separate laptop compartment like again goruck, or evergoods CPL24.

A flight attendant I follow on YouTube (I flirted with the idea for awhile) recommends several totes like this Ella bag which have a separate compartment with its own easily accessible zipper.
I bought this Everest shopping tote from Amazon that has an insulated bottom section with a separate zipper. But, it’s not tall, so your lunch would have to fit in rather flat containers.
I have one of these and like it a lot. So far I've only used a small (2oz?) purell bottle inside the case, but the bottle it comes with seems to be decent quality.
I just got the "Plus" size one of those and it is pretty awesome for the money. It holds my BT Over hear headphones and all my tech in one, albeit big, pouch.

I’ve explored the beaver tail working as a day bag/shoulder bag once on location, but mostly only something that I’ve sketched or in my head. Never tried to explore further as currently I don’t really have the skills. Something like the milspec monkey Something Bravo bag, or Direct Action Ghost backpack. But less tactical. Also that beaver tail/shoulder bag can be further shrunk/folded, along the lines of Riot Division's Transformer shoulder bag.
I personally carry the Carhartt Essential Mini Backpack! I believe it's polyester but it has a canvas feel to it.
I cascade-hang them in the closet so they are taking up less horizontal space and more vertical space. I use these tote hooks with these types of cascade hangers (I don't have these exact ones, but something similar. Make sure they are all metal, plastic ones always breaks).
I have larger backpack/duffle on large command hooks above the door in the closet. I have ridiculously tall ceiling.
The problem with those cooler bags (I actually have a similar one from Whole Foods) is that they don't compress very well. Because I walk around and rarely carry a bag that makes them a bit of a pain. That was the idea behind trying those Baggu nylon totes because they can be folded up and put in the rear pocket of my pants.
Something with a smooth interior surface is probably a good idea though, it's probably better to just wipe them down by hand than to throw them in a washing machine (which destroys a lot of the cheaper bags).
Amazon does have this, which, while not that compressible might be a decent option. I tend to prefer carrying with the hand straps anyway because I find the shoulder straps just slide off.
Since I don't feel like doing work today I've been browsing around on Amazon and found this.
It's kind of an interesting design. Has an open top but insulated sides. It also has some pockets, shelves and dividers though I can't decide if these would be useful or just get in the way. It's also machine washable.
There was something I saw on Amazon a while ago that had adjustable sections inside the bag to allow for greater organization, I'll see if I can find it again.
Yeti bags seem really expensive for what they are though my wife's cousins have one that's advertised as being bear proof; I'm not sure how common that is for coolers but I suppose that would be worth paying for.
edit: This is what I was thinking of but doesn't have a lid so not good if you want to keep stuff cold for extended periods.
Your video actually encouraged me to buy one. I've been using Timbuk2 Mission Sling and while I like it a lot, it just...has frustrating moments. Getting in and out of it even from the back zipper is frustrating, cause the internal stuffing of material from the roll top.
I like your simple video style too, direct, pointed. No random screaming or scratching and whatever other distractions happen in some. Kudos!
I don’t like wear anything bigger then 2L as a hip belt. Actually for a last year or two the only hip belt I worn was Matador Packable Hip Belt which is 82gr and where I cut off label.
Ok, about sling, first of all I bought it on purpose to use it with backpack when travel not light, so buckle not in the middle of the strap make a big difference. Then, second, it fits my slim memobottle in easily.
I have both the PD Tech Pouch and the Bellroy Classic Pouch. Both are premium products. I like the organization in the PD much better than the Bellroy. I love the way that the PD folds open allowing easy visualization of all of your stuff. The Bellroy is simplistic but may be the better option with the amount of stuff you intend to carry.
Tom Bihn also has a ton of small pouches that offer quality alternatives to organize your gear.

I also bought a shoulder strap pad, as the default bag doesn't come with one. The one I got was... okay, I may replace it at some point, but aside from a laptop and a large (full) coffee mug, I'm not really carrying enough weight day to day that it really bothers me so far.
It's obviously smaller, and lacks one of the forward pouches and it's not exactly the same on the interior either, but honestly, this does kinda feel like a BOH that was scaled down substantially and simplified a little. The magnetic snaps are decently strong, it's not a bag I'd recommend everyone rush out to get themselves, but for a budget friendly bag it's serving my needs until it's time to replace it with something bigger and better.
I prefer a bag with minimal internal organisation as a travel pack because: a) integrated organisation is rarely designed to my preferences; b) designed organisation adds weight and gratuitous weight that you must carry is never a good idea; c) organisation can be added but not subtracted (when integrated). eg., using cubes or this, which I slip into the pack's front pocket when schlepping more electronica or bric-a-brac (typically EDC) and remove at other times.
As far as external open pockets: IMO open bottle, stuff, or beaver-tail pockets are no-brainers because they extend capacity and convenience, adding minimal heft. As a habit I never pack fluids in internal compartments and that's my number one use for external, open pockets.

I was in your exact same boat about 3 months ago and went with the Travelpro Elite based on reviews and I always see pilots and flight attendants with this brand. I have zero regrets buying it. It's durable and feels like it is made with good components, zippers are smooth and wheels are so buttery. There are magnets that align the wheels to be straight that I did not think I would like but they just feel...right. The one issue that I kept seeing in reviews was that the metal zippers could fail and the pulls were brittle metal. The former issue, which I have not seen, happens when people overstuff the front pockets and the metal teeth are spread out when zipping up, and the latter issue was fixed last year. Seriously, I was a drink the Kool-Aid hard side carry on fan and now I will only use this till it dies.
I got mine during a price drop on Amazon for $225 but they are about $300 right now and I would say still worth it. Buy it and be happy.

If you're looking for a battery recommendation, my SO and I both love this one from Anker. Will completely recharge a phone + some juice left over. And to recharge it, you plug it directly into the wall, where it can also charge your devices as well. Just an all around useful battery to have around.
I do not use it as a sling. Most I'll do is throw it over my shoulder if I need to go hands free for a minute or two, but typically I don't have the straps attached. I attached a Tom Bihn Handle Loop to the Tech Case using a Cable keyring. This makes it easy to pull out of my bag and gives it one extra way to carry it.
It easily slides in and out of every backpack I've used it with so far, including an ILE Radius Mini which is only 14L, with 2 laptops in it.
There's not really overlap for me between a sling and a tech pouch, as I prefer different organization styles for both.

That's so funny -- I actually have that same green pouch you've got. I found it randomly in a Daiso while visiting some friends in California. Handy little bugger.
I've been looking for something similar, because while I have a Peak Design Tech Pouch, it's honestly too bulky and "formed" for what I need on the daily, which is a catch-all for a pair of small external SSDs, USB-C hub, earbuds and a small collection of random cables, thumb drives and other bits & bobs.
I ultimately settled on this pencil pouch. It's durable enough with a small amount of organization, but packs flat in a pinch. While I wasn't sure about it when viewing online, it was a easy "I'll give it a try" for $7 US. Turns out to be perfect -- I can even sneak a few pencils and even my Zoom H1n.
I have this Travelon roll pouch which works well. The downside of something like this is you have to have a flat-ish surface to get to your stuff.
As an alternative, I also use a small Delfonics Utility Pouch. Definitely a bit heavier and bulkier due to material, but still manageable and more enjoyable to use.
I'm a little obsessed with my Osprey Washbag I use it as a washbag but I really want another one for the purpose you describe.
It's not exactly what you're asking for as it's not flat but it's also not rigid so it will crush flat if necessary but has lots of organisation. It's boxy shape means it packs well rather than bulges as a flat pouch can do. It's partly made of stretchy mesh so will expand. You can unclip the clear pouch part if necessary.
It comes in a few colours. I've included an Amazon link but you may be able to get it cheaper elsewhere, I think I paid about half that price.
The weak magnets on the Melbourne are why I returned that bag, unfortunately, because it otherwise has a ton going for it.
There are loads of fastener clasps on Amazon or available at craft stores. I’d look at having fidlock clasps attached. I feel like the bag should’ve had fidlocks to begin with, personally.
Consider having the work done professionally at a tailor or luggage repair place - they’ll do a better job than you can, and shouldn’t charge too much.
I have the Osprey (your link doesn't work for me in the UK, but I am assuming you meant the backpack, not the wet bag) and the older Matador Freefly 16. The Osprey is cheaper and better in my book. Looks better, folds down slighly smaller, better straps. I haven't really tested for waterproofing, however.

I have had hands on the mini and the PD small wash pouch and I agree with you sentiment that it is weird to pack. It seemed to be over organized if you aren't bringing that much stuff. I decided that I didn't need a $35+ bag to carry 5-6 things and I actually settled on the tom bihn q-kit which is small and simple. If it is too small look at something like-

You're right - no shoe compartment. I missed that part. I use a cheap shoe bag when needed, which gives me a bit more flexibility in selection. And they are cheap and easily replaceable if they get worn/torn.
The zippers are #10 reverse coil - so already fairly water resistant, though they are not aquaguard zips. But then it also has the rain flap cover over the zippers to prevent water from even making contact.
I've been caught in a monsoon downpour on the motorcycle and have never had the insides get wet. I can't speak for every weather situation, but I've had no concerns.

I thought I'd like all the built in organization, but everything just slips out of the internal pockets and sprawls everywhere if the bag doesn't stay upright at all times.
The other issue was with so much fabric and chunkiness going on the inside, I don't get very much space for clothes.
I'm going to try a more duffel style bag with backpack straps that's 1/3rd the price with an Aer Slim Pouch to toss in and a draw string bag as a day/laptop bag (it packs down really small).

The Tom Bihn Absolute shoulder strap is actually the same as the Op/Tech S.O.S. Curve Strap, slightly different than the previously linked Op/Tech strap.
I have the Absolute strap as well as the standard strap that comes with the TD Commuter. The only thing unique about the Commuter strap is that the floating pad is about 19.5" long. In my opinion either one of the Op/Tech straps is a step up in quality and comfort.
I'm very conscious of bags being "too large" for their purpose and went with the Tomtoc Urban Sling.
Dimensions are 31 L x 15 W x 8 D in cm.
I took it with me on a long vacation and it was overall great. That being said, for daily use I concluded it was too big for me. I will still keep it because it would be good for longer outings and vacations, but I'm going to give the Alpaka Utility Pouch a try for daily use.

Gotcha thanks for the input. Their stuff definitely looks well made, I was hoping for an overview possibly of their pack designs. I'm concerned about the difficulty of returning a pack if it's not quite right. Right now I'm looking at the Timbuk2 Spire instead.
When I am on the road with dirty laundry, I use some clear compression bags that allow you to seal it up and roll out all the air.
The favorite ones i have are Eagle Creek - they seem to hold up a lot better than other brands and also come in colors with a slight tint to the bag, which helps notice them and not leave them somewhere.

Molle water bottle holder: Goruck has two of them, I like the mesh one as it is compact when not needed. The Bullet does not have molle on the sides though (my preferred spot for a water bottle holder).
Pill container: I use one that looks like these. If you search for them you’ll find various sizes. I find that the ones with 3 compartments are good for me.
And may I recommend adding some Loperamide. It can be very useful when traveling (diarrhea).

Ultimately, crossbody/one strap carry is best with light loads only for all day use. If you’re carrying more than a few pounds it’s backpack time.
The buckle they attaches to the camera? It’s a side release buckle wit custom webbing attachments.

Thanks for the list! I had some of the same issues you did with the ones I tried. I'm a smaller guy, so I wanted a bag that would be useful but not cover my entire torso. I ended up getting the lululemon everywhere belt bag when it was last restocked and I like it alot. It's the right size with the perfect amount of organization and really solid straps that unbuckle at a convenient spot. I don't love the branding, but the bag is overall pretty sleek imo.

...and I suspect it would work for a tripod that's roughly 10" taller (folded, I'm assuming), but couldn't say for sure.
As for the laptop sleeve, I'd need to double-check. The one quirk about the sleeve is that the sides curve inward about halfway down into the sleeve, so the opening is wider than the overall width capacity of the sleeve. I'm not sure why it does this -- perhaps to streamline the bag -- but as a result I slip my laptop inside the main section in a separate sleeve of its own.
Lowepro makes a larger version -- their BP300 -- which would undoubtedly work fine.
It also occurred to me that Wandrd makes a smaller version of the Prvke that I own (and love) which might also be suitable for your needs; they specifically call out the 14" MacBook Pro as fitting:

I have added these little things to pretty much every bag ive ever bought.
No experience with any Peak Design products but I bought myself a DayBreaker at the start of the year to use as a general EDC bag and am a huge fan. It's incredibly lightweight and comfortable (and I have the black, heavier version), though very minimal when it comes to organization or padding for a laptop so you would need to definitely use a sleeve and/or be very careful if you decide to carry one. I've also added a size 2 Nite Ize S Biner to the loop at the top of the interior and hook up some of these bags to it for a little more organization.

I use a bank deposit bag with a zipper for travel receipts. They pack flat, come in a variety of materials and are pretty cheap.
I like JBL's Clip 4 water-resistant portable speaker that has a built-in carabiner. I obviously don't blast music with it in public places or anything but I have just attached it to my bag instead of throwing it in there!

I I might get flamed because it’s not brand name but this bag goes with me everywhere I go. Hikes, dog park, playground, museums, plane spotting, I mean everywhere. I have 15+ bags ranging from $10 to $600 and this is by far my most carried. I keep my Canon 77D with a 200-400 plus a spare lens (depending what I’m shooting) 24/7. Leaves me room for the days diapers, snacks and a 2 liter water bottle.

I wouldn’t have any issue using some lens pouches though, since the Venture auto-compresses it would keep things from shifting around too much.

This is my favorite minimum unit of drone case. I'm not sure if that fits the 3, but there will no doubt be an equivalent available soon.
I have an unusual recommendation: Fjallraven No.2 Laptop, 18L with well-protected laptop compartment, padded internal pocket (seat pad) will be ideal for protecting tablet. Roomy space for all your items, can be used as travel bag during weekends, leather patch and handles look gorgeous, definitely office appropriate. Also, easy to find in EU.
I recently picked up this sling by tomtoc. It's specifically sized for the Switch, and it's basically the same size and layout as the Aer Day Pack.
I can fit a Switch, iPad Mini, an Anker 20k pack, Jabra earbuds, cords, phone, wallet, keys, and other small miscellany in it without it feeling too bulky.
Plus it's on sale for $34 bucks right now... If you have Prime you could try it out tomorrow. If it's not for you, go with one of the more expensive options. But I'm glad I tried it because I don't feel the need to upgrade.

Get a water bottle carrier + Fanny combo. The Fanny can be kept on you all times with important stuff. The bottle carrier can carry your water and park related stuff and it’s no biggy to hand off your water bottle sling or leave it for the ride.

I don’t have that one it’s just the first that came up. My park bag is a TB S19, because I like to carry snacks and fruits in. In the future I may consider the water bottle sling + Fanny + a tiny packable tote bag combo.
Take a look at the Tenba Fulton 16L. It can hold up to a 16" laptop. It's designed to hold camera gear, but the padded compartment can be used for other purposes. Here is a link to the black camo version. It also comes in a couple of other colors, but this one is the most water resistant.

The velcro field isn't sown on (yet). It's currently tacked on with this stuff. I use it often and depending on the material you're sticking it to, it's fairly reliable without needing to stitch. Unless you're running the gear pretty hard
The water bottle pocket is the most intrusive outer pocket to the main cavity, but it's not bad. With a 32 oz. Nalgene though, I think it'd be a tight fit. It will definitely fit in the front lower compartment though, without taking up much of the main space. // [Some reference photos I just found on the TB forum about it, but I'm not sure if that's a Synapse 19 or a 25]
Not that you asked—but if I was looking to buy a TB backpack right now, I'd get the Synik 30, for the improvements and slightly extra space.

They aren't too bad. Not durable at all, but I can get about 6 bags in one of these, and they sort of stack. It keeps them dust-free.
Forget the soft-sided stuff. If you're traveling for business, get a real suitcase. Briggs & Riley is the gold standard and your best option for maximizing storage - their compression packing system is a game changer. Get the 2-wheeled version, rather than the 4-wheel spinner for the most packable space. Plus, they have a true lifetime warranty and you can get them repaired almost anywhere.

Yeah, I looked again and didn't realize that it was for a 10.5 inch device, not 10.5 inches wide itself. It's actually 30cm which is too large for my purposes.
