Here's my method:
English muffins (lightly pre-toasted)
Egg beaters baked (325F for 15m) in silicone molds with a little salt & pepper (note: works just as well with whole eggs or scrambled eggs, I'm just trying to minimize calories. This whole sandwich is 257 calories, 227 for the bacon ones).
Cheddar cheese
Jalapeno slices
Bacon or Morningstar Farms maple breakfast sausage (vegetarian)
Assemble sandwiches when everything is cooled to room temp (this is crucial or you will get crystallization and sogginess), wrap in paper towel, then foil. Freeze. The night before eating, move to the fridge. When ready to eat, remove foil (save for next batch if desired) and heat in paper towel in microwave ~90 seconds. Enjoy!
Chicken (2 breasts, butterflied) - $4.55
Russet Potato - $0.63
1 tbsp olive oil - $0.09
Broccoli - $1.41
1 tbsp olive oil - $0.09
About $1.69 per meal

If this is something you enjoy packing for lunch often (and who wouldn't, it looks delicious), I would recommend investing in some more small reusable containers/baggies to reduce your paper and plastic waste! I have some Sistema tiny containers, as well as some baggies like these ones- it also allows you to buy things in bulk rather than individual serves (like your carrots and yogurts, for example), which is usually cheaper.
During the baby food making part of my life, I bought silicone ice cube molds on amazon. Each cube is one ounce. Once frozen, all the little cubes stacked super neatly in a freezer bag. It made it so easy to add a one fruit cube to oatmeal, or to mix together different veggie blends. You always know exactly how many ounces you are heating up and waste very little.

Rice: Make brown rice per recipe instructions. In a wok, add your favorite vegi mix (frozen) to the pan with canola oil until soft. Add cooked rice to pan and cook and incorporate the rice. Create a ring in the pan, like a donut and crack a couple of eggs in there and scramble them up. Mix it up and add some tamari in there with some garlic poweder, salt and pepper. Fried rice is pretty easy to make and you can dress it up however you like it.
Beijing Beef: I used this recipe because I wanted to get it pretty close to the original. Only changes are that I used red and yellow peppers, and tamari instead of soy sauce. This turned out REAL tasty.
Mushroom Chicken: Cut 2 chicken breast into small pieces and coat with corn starch. Cook in oil until browned and remove. Add mushrooms and zucchini (I didn't measure, sorry), add garlic and cook until fragrant. When veggies are soft, add chicken back in and add tamari, rice wine vinegar, and some hoisin sauce. I used more tamari to vinegar in a maybe 4/1 ratio? Hoisin sauce was added after I was done cooking, the tamari was a little too powerful but it tasted about right after maybe 2 tablespoons of hoisin.
Sorry again about the instructions, i don't do a lot of measuring.
EDIT: A lot of people are commenting about the plastic trays so I thought I would just post that they ARE reusable and recyclable. Here is a similar product for those interested.
Second: Soy sauce has gluten in it as it is fermented in grains. Tamari is a very similar product that IS gluten free, however, Panda Express does not use this product. There are also other products out there like "Liquid Amino" which is also gluten free.

it's a very low calorie, low glycemic sryup that's used in the quest bars to make it bind together. i bought some and it does not have a funny fake sugar taste at all. worth trying if you want to make more "meal replacement bars".

There are even wide mouth models specifically made for more solid foods instead of the traditional coffee.
Also, to increase hold time, pour boiling water in first and keep it for a minute or two. Drain, then add your boiling hot stew, etc. The hot water is like a preheat cycle, cools the food less. Reverse it with ice water for cold stuff.

I have 3 rules in my kitchen:
When meal-prepping, at minimum, I hose off all of the equipment with hot water using the sprayer immediately after using it. Sometimes soaping stuff off with a dobie or loading the dishwasher interrupts my workflow too much, but at minimum, I can walk my bowls, pans, and utensils over to the sink & give them a quick rinse off so they don't get food glued onto them by the time I'm done.
What made it really convenient was getting a kitchen faucet with a built-in sprayer in the head. This isn't the exact model I have, but the idea is the same:

There's a push-button that cycles between regular faucet & shower-spray output, and you can pull the head off to angle around whatever item you're rinsing off. So if I just finished up with my Instant Pot but I'm still cooking other stuff, I can bring the pot to the sink, give it a quick rinse with hot water from the sprayer, and then it's easy to clean by hand or throw in the dishwasher when I'm all wrapped up for my meal-prep session. This setup creates a fairly low-friction environment mentally, which makes it easy to use.
These look great! Get yourself a pack of silicone cupcake liners!... those are great, reusable and also work well for wet stuff like hummus that would get gross in the paper liners.
This is my first time using them, but they were advertised as dishwasher, microwave, freezer safe so I’m going to try and get a few uses out of them. They do feel pretty flimsy though.

Finely chopping the beef is actually a very important step. Allows more surface area for seasoning per bite.

I'm partial to Pyrex. It is a durable glass which doesn't stain, holds up to multiple washes and they offer containers that are perfect single portion size. You can find it fairly cheap around this time of year on amazon or from local stores that are offering deals. Its worth the extra cash since it lasts foooorevvvver.

I also want to point out here that peanut butter and beans are much cheaper protein than any meat you come across(at least in my experience in North America).
Produce in most places is cheaper than meat.
If you live in North America you will not beat potatoes for dollar per calorie density. Look for dishes that use lots of potatoes.
Carrots are also very inexpensive year around because they keep so long.
Consider a chili because most recipes are a attempt to extend the taste of tiny bit of meat by adding bean proteins and spices.
Also freecycle (https://www.freecycle.org/) a request for a rice cooker or a electric cooking element pots/pans whatever you need. If you are not in a low density population region you can pick these things up with patience and timing.

A decent knife is a must. That's the classic "low cost, but decent" choice (there are others, but this is the most commonly available choice). It will make a big difference. Makes a good present if you can't afford it outright.
Not OP but I recently transitioned my dog to homemade food from kibble. During the transition I slowly phased kibble out and the new food in.
My dog is a St Bernard/Shepherd mix but ate about 2 cups of kibble per day plus chews/treats. Currently I use the same base for the food and vary the grains/veggies.
In the crockpot on high for 4-4.5 hours or low for 8 put in the crockpot in the following order: 1.5-2 cups water 1 cup brown rice (or quinoa mix) 1-2 cubed sweet potatoes 3 chicken breasts 1 (16oz) bag frozen peas/carrots 1/2 bag frozen broccoli florets* 1 (16oz) bag frozen green beans* 1 multi-vitamin tablet in each serving (he eats twice a day)
My pup reeeeeally likes frozen broccoli florets in any form (cooked, frozen, thawed but cold) so sometimes I just throw in a couple florets in his bowl when I feed him instead of cooking them in the food.
Yields about 10-14 days of food depending on if he gets peanut butter-filled Kongs that week, etc.

I make salad jars for my husband to take to work occasionally , but have just discovered a new lunchbox which is the Systema Salad Max.
That way the salad leaves keep even fresher underneath and if he isn't in the mood for certain toppings/tomatoes etc, he can just not put them in the salad. The bowl underneath is large enough that he can just throw the toppings in and the dressing and voila! I also like the dressing tub, though I worry it may be too small. Time shall tell.
If you do get a vacuum sealer, don't buy the name brand sealer bags. I buy mine from amazon. These work just fine and they're half the price basically.

I've done endless batches of chili in them, but don't think it's tempered glass or anything. They do not go from freezer to microwave. It's best to let them thaw out in the fridge the night or two before and move to a lunch container to reheat later that day. I like borosilicate glass food storage containers with the plastic snap lid
Also, because you're not pressure canning, I would buy these plastic lids and reuse them over and over.

Might I suggest an anti-fatigue mat? I used to absolutely hate cooking dinner after I got home from work because my feet would be so tired that standing for another 30 minutes was excruciating. I got an anti-fatigue mat for Christmas (the exact one in the link) and it’s been magical. I can stand and cook for much longer without pain. I could never go back to life without one.
Not OP, but we get a packet of butter chicken flavor paste (it's like $2). Follow its directions and throw in whatever protein you like: chicken, pork, chick peas, etc. it's a very easy meal!

A lot of Japanese bento dishes are meant to be eaten at room temperature rather than microwaved. I've gotten a lot of recipes from Effortless Bento which have been very tasty. You could also check out Just One Cookbook, which has some bento recipes too.
It usually comes in a box like this and is probably labeled "sauce mix". I really like Vermont Curry but Golden Curry is usually more common in US grocery stores and it's good too.
The back of the box walks you through the steps and suggests ingredients, but specifically what I did here:
2 potatoes, 1 onion, 1 head of cauliflower, 'bout a cup of carrots and a cup green bean, and half the curry mix.

Hunted high and low for days searching for a lunchbox that met my measurement needs. Basically this does two things exceptionally well:
1.) Fits two medium sized glass containers side by side without straining the zipper on this lunchbox.
2.) Fits the popular Amazon reusable Bentobox/tv dinner style thing you see a lot on this subreddit.
In both cases there's enough room for an ice pack or two plus other snacks if I need them. It goes without saying that it's big enough for a normal sandwich. Works great, I'm going to use it until I run it into the ground and then probably buy another one just like it!
You can use mason jars that are freezer safe and use the FoodSaver Vacuum Sealer Wide-Mouth Jar Kit found on Amazon do that you minimize plastic and also for certain foods you don’t crush it.
There’s always something! I’m really sorry you live far away, even as a partner it can be hard to see your SO struggle with that burden. Sending care packages is also a great idea! Things for the caregiver as well as things for the person whose sick. There’s a really good clock you could send to help the dad as well as treats for the mom, audio books and other things. If it’s within your means offering to fly down for a weekend to help every so often may be good but isn’t always possible. :) Or calling snd setting up meal delivery or adult-sitting services.

I use three different brands, but the one I like best is this one: ME.FAN It is large and stable. I haven’t tried soups in it before but they should be ok if you don’t fill it too high and make sure it’s sealed well.

So, I didn't even like salmon until I learned how to make it this way: and now I can't stop eating it!
I cut up the filets pretty small, rub on a bit of olive oil, season w/ salt, pepper, garlic powder, smoked paprika. I feel what makes it taste incredible is adding some dried dill, along with a nice drizzle of honey. Repeat this on both sides; however, I wouldn't add honey to the bottom side of the filet as it may burn while baking. Bake for ~40 mins at 375F. Maybe hit it with a broil for a minute or two at the end.
For the taters, I buy a big bag of bulk yellow/red mini potatoes from Costco and cut them up into quarters. Season with some green thai curry (linked below) and paprika. Bake ~45 mins at 375. The key is to broil them for about 3-4 minutes at the end to get a nice crispy exterior.

Paper towels are this kind of product. You can see the ones I used in the lower half of the photo. Yes, just wrap it, I place the assembled sandwich in the center of the towel, fold 2opposite sides over the sandwich, then fold the other 2 sides, then wrap in foil.

When I was running 90 miles per week (sub 2:40 marathon goal), I had 0 problems with it because I basically only ate rice.
In 2012 I hiked the 220 mile long JMT. My first ever backpacking trip. I knew very little.
I learned very quickly that I had to cut my lantus from 25 units a day to 11units, as I was going through all of my food just to keep my sugar up.
By the end of that trip, I learned that I didn't need to take fast acting Humalog and could rely on just my 11 units of Lantus, just by taking out half of my carbs (probably still consuming around 100g a day).
What I didn't realize was that my blood acid levels were on the rise and I was in great danger, later confirmed by my endo.

So if I am not eating a ton of carbs, I don't take insulin. No insulin = fat break down, which leads to ketoacidosis.
Many T1 backpackers bring ketone strips for this exact problem. Why non diabetics don't have the same problem? I am not sure.

You can use compartment containers like these to reduce plastic waste as well as keep your food separated.

There is no one meal that provides all of your nutritional needs, as the body requires quite a variety of vitamins and minerals. However, you can get a good portion of your necessary nutrients by eating something like chicken/rice/broccoli or spinach and drinking milk.
Assuming you eat 3 oz chicken breast, 1 c brown rice, 1 c broccoli, and drink 1 glass of whole milk 3 times a day, that puts you at about 1800 kcals, where you've met or exceeded all macro/micronutrient goals except:
If you cook your food in a bit of oil and season it, you should be able to hit the fat and sodium requirements. Otherwise, you could look into condiments or maybe avocado. Then, all you have to do is find a way to get in more vitamins D and E, potassium, and iron.
I used Cronometer to determine the caloric and nutritional values of the food listed.
I will say these are a little smaller than the plastic containers I'm used to (22 oz. compared to at least 30 oz.) and I was a little worried about that but it wasn't an issue at all. If one was bulking or intermittent fasting and needed large portions the same brand also offers a bigger size.

Spinach salads with bell pepper, cucumber, craisins, walnuts, and blue cheese crumble. Raspberry walnut vinaigrette dressing is my preference.
Quinoa salad with chickpeas, cucumber, bell pepper, red onion, chopped parsley. Dressing is basically just fresh squeezed lemon juice and garlic.
Mandarin chicken pasta salad = farfalle, chicken, spinach, mandarin oranges, red bell pepper, sun dried tomatoes, shaved carrots, and chopped green beans. I use ken’s sesame ginger dressing for this one.

We got these. They’re fantastic, reusable, lightweight, durable, lidded, and microwave safe. Probably not oven safe though, since they’re plastic.
They are little biscuits cookies called Alfort ! It's from Japan, and it's a cookies/biscuits with thin slice of chocolate on top. Darker blue is dark chocolate, and lighter blue is milk chocolate. I crave them from time to time and end up eating the whole bag in a few hours :/
Dude. I use a set that meets all the criteria BUT microwave safe lids. Might I suggest you get a microwave protector dome that could go over your Tupperware as you heat it up? You can get one real cheap on Amazon and it saves a lot of headache.

Yeah just make sure you buy your vacuum sealer bags on amazon. They're like half the price of name brand and work very well.

From the top, its pot roast with carrots, celery, and potatoes, chicken salad with cucumber salad and grapes, and turkey meatballs over oven baked zucchini. :)
Those baggies will get expensive! If you want to do this for the long run, invest in some glass tupperware from Amazon. I've been really happy with these, but they also make one with more compartments. Mine don't collect smells and they've carried some pretty stinky stuff.
Also might want to pack the tzatziki separately. Not sure if it will make your salad soggy. Great start though! Hope it works out for you.
