As for the elbow connector, that's up to you, really. I don't use one, I just run the cable along of side of the headset to the back strap and fasten it with a velco strip (included with the cable) so that it runs down my back. While the cord juts out of the headset at kind of a weird angle as a result, the stress on the port shouldn't be too bad without any weight being placed on it (I also give it a bit of slack so it's not bending the cable/port too much). Perhaps more importantly, having the cable completely out of the way means I sometimes forget I have a cable attached at all... something I would have never said with my Rift CV1.
I can only speak to the Anker one that Oculus suggests [https://www.amazon.ca/dp/B01MZIPYPY/]. It works perfectly for me, and I sometimes use it with an active USB 3 extension cable depending on where I'm setting up.
There's no hard and fast USB port standards, but you're right in that blue USB ports are typically USB 3.1 Gen 1, whereas red ones are USB 3.1 Gen 2. You'll want to use a USB 3 cable with either one of these for the best experience, but you can technically use USB 2 cables/ports as well (although I believe that limits you to 72Hz on the Quest 2 currently).
I think the Wiki over on the r/OculusQuest subreddit [https://www.reddit.com/r/oculusquest/wiki/] has a chart of cables that people have used successfully... it's a great resource for not just Link help but all things Quest, so I'd definitely recommend checking that out if you haven't already.

I just received this cable a few days ago, and even though it works great with the Quest, 10 feet is WAY too short!
Under the Virtual Reality section on Amazon this is what they show you. There's no guarantee they will all work, but since that's the specific section for VR cords you might have a better chance at finding one that works compared to just looking up random ones and hoping for the best...
Honestly, there is no time to give or time frame for that matter. It really is luck of the draw. What I CAN say is that recently Oculus has been restocking the Quest and many other items such as Rift S and original Rift (Refurbished, they use another term for refurbished though), very often as of the last month. I managed to score my Link cable roughly 3 weeks back. So be on the look out. However, before I had the official link cable, I can wholeheartedly recommend this cable from Anker works. Some reviews said it did not for them but most of the reviewers said the same as myself. Works flawlessly. Also, if it doesn't work, just go into orders and "return" it. Anker offer's a full refund and you can most likely keep the cable (mainly because of everything going on). They will simply ask for the serial number to be sent to them via Amazon message or your email and that's that. Free cable if it doesn't work, to use on charging, etc. Here's the link. Note that it's USB-C to 3.0 so USB-A. They have USB-A to USB-C adapter's you can purchase on amazon as well to make it C to C like the Link cable but this is not always necessary and was not for me. I was thinking precisely to power saving, because in the past I had a problem with a USB device and the disconnection was due to this reason... I just tried the Anker cable and the USB settings are the next step...
The cable is the correct one THIS , I bought it in Germany because amazon Italy had the shorter 2 m one.
