This is on my project list for next year. Mounts under the hull between the toons and just slides out.
How would you feel about signal flags? I don't know how picky you are about the size of the flag what you're looking for seems to be between the two sizes that this place sells. I've been considering getting some of these for my boat, the quality seems below par but could still be fun.

Put it on top of a 5 gallon bucket. Use a trash bag liner. Normally I just put trash in it but if someone has to pinch a loaf there it is. I got it for my wife but in 10 years it’s never been used to fecal deposit. Thank goodness. BUT, it’s there.
And you can use it as a seat it you got to. Or a bucket.

Many pontoons come with a pop up changing room area. You put the toilet in there and take a shit three feet from your friends.
I looked into this and a portable pop up room but decided no one wanted that.
If he fishes you could look at rod holders that mount to the rail. Waterproof storage cases and bags are always nice to have on board. We also like these towels because they don't take up a lot of room but still absorb a decent amount of water. My most recent one was this one. I have it in the boat, on the water. Its plugged in to a surge protector, and even so every year or two a nearby lightning strike will take it out. So I go for cheap.

Adding a grill was one of my biggest priorities when we got our boat. After MUCH deliberation, I opted for a non-mounted option. I wanted something I could stow away when not in use, then haul out on the shore when we beached somewhere for lunch. I also wanted the option to take camping or tailgating if needed. So far... I'm happy with my decision.

From there I power the motor and wired these converters to that using the worry they come with. (Only 300w max and 6” run so... no issues with voltage drop or heat)

I don't fish and didn't even realize it was capable of some basic fishfinding until about a year later. For the price, and considering it mostly took zip ties, two holes, and the smallest amount of wiring to install, this has been a hugely beneficial investment. It's extremely useful and full-featured, probably the best improvement I've made to our pontoon so far.
