1) Go to your phone Settings > Security and enable "Unknown sources" to allow installation of apps from unknown sources.
2) Open the SwiftKey app and ensure your account data is backed up.
3) Go to SwiftKey in the Google Play Store and uninstall the app.
4) Download and install the 6.5.3.35 version for your device from APKMirror.com: https://www.apkmirror.com/apk/swiftkey/swiftkey-keyboard/swiftkey-keyboard-6-5-3-35-release/
5) Go back to the Play Store and tap the three dots button in the upper-right corner. Uncheck Auto-update.
6) Open the app, login, and restore your settings.

This annoyed me too so I just downloaded an old apk and installed it. This is the version I used. The smart emoji suggestion is gone! Make sure to back up all of your predictions and stuff if you wanted to transfer it over. I didn't and had to reinstall it like new.
It isn't on the play store, but if you really want it you can grab the apk here, and install it. You'll need to turn on install from unknown sources in your settings.
Just ran into this myself. The below steps are what I took and worked for me:
Install the oldest version on APKMirror: https://www.apkmirror.com/apk/swiftkey/swiftkey-keyboard/swiftkey-keyboard-5-2-1-120-3-release/
Select your desired theme
In Play Store, upgrade to the latest SwiftKey version
Your theme will be preserved.
Because this is a system-level thing, SwiftKey can not turn it off. But you can try uninstalling/disabling all other keyboards and the icon should go away (just keep in mind that if something happens to SwiftKey for whatever reason, you may be without a keyboard).
If you're running Android 7.0 or higher, and you're rooted or have a computer nearby, you can also install something like Custom Navigation Bar to 'disable' it.
