Looks like Costco has it for $1080. I know it's only $20 cheaper, but their TVs come with at least an additional year of warranty included and they are very helpful if you have any problems.
The KS8000 is $729 before tax again on Samsung's website, so long as you use their Employee Purchase Program benefits.
See the section slightly down that page detailing how to enable EPP. It's pretty tough to beat that price.
You can get the KU7000 (first link) for 600 dollars if you have Samsung EPP (so ive heard, i dont have it) Or 700 dollars if you buy through an ebay dealer called buydig.

All day every day, this is such a great TV.
These are the two TVs you're after: TCL P607, though you can get the C803 from Costco for $550, lose some brightness and gain some sound, or a Sony X900. IMO the Sonys cost isnt worth it when you can get an extended warranty on the TCL and still save $400.
Also if your Mac Mini doesnt support HDMI 2.0 I'd recommend looking into a $199 Xbox One S - which includes 4k@60hz and Windows 10 App support (keyboard and mouse coming soon) and a 4K Blu-Ray player, not to mention things like EA Access for $30 / year if you ever get into gaming.

I took a look at the models that are around that size and in a similar price range. It looks like Samsung is priced a little more expensive than Insignia from what I saw. However, if you like the features more on a slightly more expensive TV, I can help you pick a possible time to buy.

if you plan to keep this a while, id highly recommend getting the largest tv you can afford, that will fit in your space. My personal opinion, for most people, they will enjoy a larger screen over slightly better picture quality.
how far away do you sit away from the screen? A 55" 4k is a bit small, id be looking at a 60" or probably a 65".

This Samsung 4k tv should work for you. It's 60" 4k, supports HDR isn't curved or 3d and is under $1,000.
Should be about as future proof as you can get given your price range.
That looks really impressive, 4k and has hdr. Is there any catch? Do you own it? Was looking for only 1080p, but this is an impressive TV.

I went with this Sony 48" TV and I'm really happy with it. It's checked all my gaming boxes and the built-in speakers are surprisingly decent; we watched the new Star Wars on it and it actually sounded really good.
You'll have a difficult time finding a non smart TV. I was in the same situation as you last year, as I use my TV directly connected to my Gaming PC which acts as an Home theater PC.
I haven't seen this exact version with my own eyes, but I almost bought last eyars version when looking at TV's. For under $600, its a decent TV for the price:
