Basically didn't use any "American BBQ" ingredients, I used this mushroom umami rub, and bathed the ribs every 45min in this Japanese BBQ Sauce. Once done covered them in everything bagel seasoning and green onion. They tasted absolutely amazing, I'll have some gyoza dumplings on the side with them next time.
Slightly different than u/dreadphile, used this wet brine: turkey brine On a 14 lb turkey. Didn’t have rosemary, but used his same method of 1/2 stick butter, salt, pepper, minced garlic, sage and maple syrup sautéed together and basted every hour. 180 for 3 1/2 hours and 325 for 1 1/2 hour. Rested for about 30 minutes before carving.

I bought a pair of folding shelving brackets and a 24”x18” cutting board off of amazon. The brackets I just lined up on the grill and drilled two new holes to fit the already outfitted hole for the small shelf. Then with measuring and a little bit of eye balling, marked the cutting board as it sat on the brackets and screwed them in from the bottom up. Took a little time to complete but all in all wasn’t overly complicated and this has way more practicality!

I use a jerky gun from Amazon. I linked it below. It’s basically a caulk gun for meat. I mix the cure, seasoning and water with the ground meat the day before I want to smoke it. I’ll let the mixture sit in the fridge overnight then form the sticks on a screen using the jerky gun. Smoke at 170° for 4-5 hours and they’re the perfect texture. They don’t fall apart at all.

I use a pellet smoke tray rather than tube because it has a lot more flexibility. It'll burn for over 12 hours, or if I want more smoke I can light both ends, and adding more pellets is easy...just add more.
Lavalock is a brand of high temp gasket used for sealing BBQ grills. When people say you should lavalock it, they are saying to use the Lavalock (or similar) gasket around the lid to seal the gaps. The Lavalock brand seems to be the most recommended brand, but it is not the only one.

Great story and I’m glad you got the smoker back! I’m also in the process restoring a old Lil’ Tex Traeger that was originally made in Oregon before they shipped production to China. Mostly surface rust and some minor pitting on the smoker body on the hopper side. Finished sanding most of it down and will spray it using the Rust-Oleum High Heat spray paint. Question for you…are you planning to paint inside the smoker? I decided against it and just tried to remove as much rust and paint as I could. Will apply multiple coats of cooking oil inside and fire it up to hopefully form a protective barrier and bake/cure the outside spray paint. It also had the simple 3 dial smoke, low, and high control panel which I plan to switch out to a digital one. Any opinions on the Ortech? Ortech
Some Traeger models have ceramic coated grates. I was told by several people to not use wire on those. I ended up getting one that has those and I use a lodge cast iron scraper (made of tough plastic)

It is. I switched to cookinpellets all hickory and it made a huge difference. If you want to ramp it up even more, you can get one of these.
My recommendations:
Non-damaging grill brush, plastic (or wood) scrapers (I really like the traeger official one), a traeger brand grill cover, tray liners, the drip bucket liners, and I really like their cleaner.

As for the Pyrex, it’s brisket trimmings that I’m rendering so I can put a bit of that Smokey fat into a bbq sauce…Aaron Franklin’s Espresso sauce to be exact.

Both items have been a great addition. The smoke tube is great for either adding additional smoke to a cook or for use in cold smoking with the grill turned off. Lava lock really increased my grill efficiency and better traps the smoke. Best of luck!

It fits the 575 perfectly. After some playing around, I have found that 400-420 for the smoker gets the oven to a little over 500. Pizza takes 5-6 minutes and is amazing.
When I first got it, I cranked the grill to 500. The oven got the over 700. It was burning the bottom before the top got done.

It absolutely does the trick but I find it a bit too thick. When I cooked brisket with it I didn’t like how hard I had to press to pierce the paper to take the temp. I find it difficult to judge if it is “probe tender” or not.
I just watched Matt Pittman from Meat Church on Traeger’s IG page cook a brisket and he uses his butcher paper obviously. And if you watch you’ll see him put his thermometer right through the paper like butter when checking for “probe tender”. That sold me right there. Once I’m done with what I got I’m gonna buy his.

No, I've never used it yet. I've been using an Inkbird IBBQ-4T that I had before I got my Silverton.
i used to have one. Yes it does, however it takes a bit longer (5s or more) to get the actual internal temp. Lets say your meat is 135, when sticking the thermometer in it might read 127 and then slowly creep up to the actual temp. It says its water resistant but it really is not, mine broke when a bit of water got onto it. I upgraded to the one i linked below and it reads a lot faster and actually is water resistant.

I haven't had to fight any below freezing temps yet, but I have mine folded in half and draped over the top from just above the handle on the lid. I'm using 20 heavy duty magnets to hold it on place. 10 by the handle, and 10 by the hinge. I think this will work well, but it hasn't truly been tested yet.
If you are gonna spend as much money on Pellets as the Traeger brand costs, then I suggest go to Amazon for some CookinPellets, they have either the Perfect Mix, or Hickory
Those are twice the size bags of Traeger, so keep that in mind when comparing price.
I use the perfect mix when I'm smoking stuff. If I am just using the Traeger for heat, for example when I have ribs wrapped in foil or I'm grilling burgers, I use cheap stuff that I get at Cash and Carry. They are $6.99 a bag and basically the same as Traeger, which is Alder wood mixed with a little flavor wood.

Amazon has lots of options. Depends if you want to spend the money on a traeger one or buy an after market one. Or if you want meat probes or not. I think built is probes are useless because I use a wireless thermometer.

You could try this one, has good flavor and controllable heat but couldn't tell you how much to use. If you do try it, add it in and mix it up, let it simmer for about 1/4-1/2 hour then take a small bit out and put it in the refrigerator for about 1/4-1/2 hour or until cold and then heat it up (microwave works just fine) and try it, the heat will be much stronger than before, found this out the hard/hot way in the past.

It’s pretty common for smoke to leak from the lid. I put lava lock on mine and it made all the difference. Seems to be more consistent temps too. And it’s super cheap and takes 5 minutes to install. Just serves as a gasket for the lid.

Welcome to the family. Make your first upgrade to be some Lava Lock gasket material. The lid will leak smoke and heat from the left lower corner. Watch some YouTube videos for installation. You’ll want to shin under the hinges to make it seal perfectly and level.

If you're looking for a cheaper alternative for jerky racks, I'd recommend the sunflair racks on Amazon. I used them on a 22 series for venison sticks and they worked great.
Not that it will help with your cook tomorrow, OP, but this product is what I am using (my stock probe having long since gotten broken at the plug end). Cheap and easy prime-shipped replacement. Whatever replacement you get just make sure it has the "stereo" plug (two black lines on the 1/8" jack) and it should work.
So I do not follow a set recipe when I do jerky.
I don't marinade it as I tried that once and it just wasn't for me.
What I do is I get the meat thinly sliced like quarter of an inch. I'll season it with my favorite spice, and toss on my trager at the smoke setting for however long until I think it done.

I like to include a smoke tube (https://www.amazon.com/Smoke-Tube-Billowing-Stainless-Smoking/dp/B091J3YHYS/) when I want to add smoky flavor on short time cooks like chicken or now that I think of it, I use it when I cook almost all my food except veg, dips, and fish.
This grill cover may do the trick for you, although I'm not familiar with the particular model you have.
Here’s what I did to my 885, and you’ll likely want to do the same. The lower left corner is notorious for leaking, but this simple fix does the trick.
Get a pizza screen. Bake it on one side till you get a thin crust, it should still be white. Flip it, top it and cook it.
Get this and never look back! Perfect pizzas in 5-7 mins. I love this bad boy.

I bought a “cheaper” Wi-Fi thermometer from Amazon in the beginning of 2019 to get me some range while cooking. I wasn’t sure if I was gonna stay with smoking or not so I didn’t want to waste too much money. I got the Inkbird WiFi Grill Thermometer. If you have Prime they have a coupon for 50% off right now.
I still use it, it’s been through so much shit, gotten too close to the fire box and melted some, dropped hundreds of times, and still works great. I never planned on keeping it this long but it’s a workhorse.
Any 'outdoor rated' or 'heavy duty' grounded (3 hole, not two) extension cord should be fine.

I just bought these and put them up over my Santa Maria grill and blackstone griddle. Mounted the solar panel on top of my pergola and ran the wires topside to hide them from vision.

I had a similar issue. I wanted to add another temperature gauge to my Weber Kettle but the first two gauges I bought had too big of threads. I didn't want to drill large holes. I recommend this; it fits perfectly for mine and it's made in the USA.

Sometimes the bacon slab is a little wide and perhaps a 12 inch model would do. But those jumped up a bit in price. I found that cutting a strip off the slab did the trick. And nothing wrong with a section of bacon for carbonara.

Go to Amazon and buy this. One of the reviews has a guy showing you how to sift out the fines. I do it into a five gallon bucket and I save the dust. Each week after the trashman comes, if there is the nasty ooze in the bottom, I toss a bit down there.

I have a pair of these that work pretty well, and cheap… Oven, grill, fire, it doesn’t matter!
I grabbed this one but wish I got one with more than 2 probes. The range is really nice. My traeger sits on the back of my property so a good distance.
