So at my church, I use one of these to turn on a device that is difficult to reach. I have several other ones at home. You can actually get multiple plugs and have them all connected to the same button. They're cheap and easy to set up. And these have a button on the side of them that can be used in lieu of using the remote.
There's also some other types of remotes where each item can be controlled by a separate button, but there's also an "all on" and "all off" button. But even if you're pressing multiple buttons, having them all on a single remote would still make it easier to do.
I don't think you're going to like the price of touch control TVs. This 84" TV is $20k. The price is much lower for smaller screen sizes. It requires a direct USB connection to your computer to work, which is not convenient at all on stage.
ProPresenter's Telestrator functionality is meant to be done in the program or via the ProPresenter Remote app. Neither of these solve what you want. I wouldn't recommend the Remote app for your pastor in most cases. It's great for the tech person that needs to be in two places at once, but not convenient for the person speaking. A presenter remote is much easier if they need to have control. I highly recommend DSAN Perfect Cue remotes. This is their cheapest mode.l It's an industry-standard in the corporate event world.
As far as input, if the TV sends commands for Left and Right it would work with ProPresenter.

We got a Sony FDR-AX53. It has pretty much everything I listed and there's a third party remote that allows for remote power and zoom (From JJC)
Apparently there is an IR sensor on the AX53 but there's no IR remote with the ability to power on/off. But there are remotes that seem to work with it so you can navigate menus and whatnot.
Cheapest solution is to buy a RCA to CAT 6 converter.

Take the "tape out" from your soundboard and run it into a cheap stereo system of your nursery that also has a RCA input. or also buy a simple RCA to 1/8 inch TRS adapter and plug into any consumer sound bar, stereo, speaker system.
Running ethernet cable through a building is really not hard. You can even buy that low profile, flat ethernet cable they make now and just run it along your base boards/molding and use white tape to keep it down.
(forgot to mention, i guess you need to by the ethernet cable as well, but that is still WELL below your $300 mark.
Try this. We use this with an iPhone 6 that still has 3.5mm jack with Facebook Ljve. Audio sounds about as good as our recordings. Best of luck.
Why not use a cheap Android phone for recording audio.

You could use a PC microphone (one of those lapel mics) - and just connect it to the earphone jack on the phone, and it will work as an external microphone.
The app has been tested for 100 hours recording time, and 34 hours on single charge on a Note 4 - so recording a few hours should not be a problem. Use OGG compression (or MP3 if you want to pay for that).
The app can be used with screen off, and recording can be controlled with 3 clicks of the Power button as well. It has a whole bunch of other features for audio recording.
For recording lectures etc, you can keep the phone set to Airplane Mode (which turns off phone and SMS etc. functions), and turn Off Wifi also. This will ensure there is no alert sounds etc. Also remove any apps which have a habit of showing alerts and alert sounds.
