Dark Disciple is a novel adapting an unreleased Clone Wars arc with Asajj Ventress and Quinlan Vos. The comic miniseries Son of Dathomir adapts a Darth Maul story between his last current appearance in the Clone Wars and his upcoming appearance in the next season. The 'Age of Republic' series are a series of unconnected comics focusing on characters from that era. They're written by Jody Houser, are collected across two trades and I take every chance to recommend them. They're short stories so don't expect major plot stuff but she definitely gets the characters.

Haven't read the Republic Commando series yet so can't comment. Loved the game but maybe that's why you're reading them.

Finally, this is a timeline of everything canon but I get the vibe you're asking for something between me listing off random shit and a list of EVERYTHING. Here it is anyway.

Guess I'll toss this here too. Haven't read most of them and it's a mix of canon and Legends but at least this list is only comics so you can learn more about them and then look for them elsewhere if you'd rather not go digital.

They've seen the original trilogy, TPM, AOTC, but have not seen ROTS. They do know the general story though… through some graphic novels that we have… which is a pretty accurate retelling of the movie (some parts are glossed over, but all the important bits are there).
I'm now leaning towards rereading the ROTS comics with them so they get a plot refresher, then watching 9–12, then watch ROTS.
And yes, I know I'm giving this WAY too much thought. But this is important stuff!
