Yep, pad thai is pretty easy.
Also, Maesri brand curry paste is a great base for making your own curry. With coconut milk, some veggies and protein, you have a pretty decent curry experience close to some restaurants. Of course, making your own curry paste is better, but I have lots of thai friends who prefer this brand (as do I).

You can buy it! It's pretty much gonna be this stuff sent hoping the automod doesn't nuke the link. You can find the stuff, or roughly the same stuff, in any supermarket spice rack that I've seen, so if you're in North America at least, you should be able to find it. (Or you could buy it off Amazon.)
