As an alternative, in terms of linking the downstairs office with the sofa (which is really my priority), given unfortunately I can't really run a wire to get to the sofa would something like the below do the trick? Would it work through he brick/concrete ceiling wall (not sure what material it is) between office and living room?
Why not just put a cheap 5 port Netgear switch in it? You could also get a bit fancier switches that are PoE powered and managed like the Unifi Flex Mini, but if you don't need any management and just want more ports, something like this https://www.amazon.de/-/en/Netgear-GS305-300PES-Gigabit-installation-connectors/dp/B07PTMXBDK/ is cheap, undestructable and gives you way more performance, since ethernet, unlike wifi, is full duplex and realisticly it isn't a problem to share 1gbe uplink in your case.
Yes, I wouldn’t be surprised if the ISP or government here block VPNs, but I mean a normal ping to that server works? Hotspot Shield (so a commercial VPN) also work. Anyway I could test this further? Further than just pinging my home network

You mean WireGuard.
And where is no option to connect to third-party VPN via F!B. You can create your own network between two FritzBoxes using new Wireguard protocol with new beta version of FritzOS, but you can't use configs from VPN services.
This video is for May beta version, but nothing changed in terms of third party VPN support till now.
You can set the 7530 up to VPN out to either a VPN server or to another fritzbox. You can also set the box up to allow you to VPN into your home network.
These both use some industry standard VPN protocols.

I have this one, which I use with a giffgaff PAYG SIM. It's a bit old but works fine. I've yet to see any USB 5G dongles on the market, at least in the UK where I am.

If you can solder, you can add the pins to the unpopulated serial port (UART) and see what's going on.
Here's the pinout and the parameters to connect to it are 115200 bauds (8 bits no parity). Mind that it's a 3.3V UART, do NOT try otherwise you'll blow the chip.

You should be able to stop the boot sequence to enter the EVA bootloader and then proceed with the recovery tool.
If you let it boot you should see error messages and get some clue on what's the issue.

Having said that, did you have any storm or other electrical anomaly (blackout, brownout) prior the router giving you issues?
Also might have been corrupted during an automatic update because of an unfortunate coincidence.
Anyway if you at least can get to the bootloader you should be able to recover it.

Though its slow from New Zealand, and the latancy would not really be good enough for gaming. They do have a server in Australia though which is better than the ones in the US, but still not really good enough.
As a former ISP customer service agent (though admittedly DSL/fiber, not cable): have you contacted your ISP about your connection? A dropping connection doesn't necessarily have to be the fault of the modem, it can also be a problem with the connection.
That being said, IMO, yes. Fritzbox offers not only a far more user-friendly way to manage your network, but it also offers some great features. Personally, I've been very happy by its ability to function as a media server and NAS, as this has allowed me to use BubbleUPnP to cast any video on the hard drive attached to my Fritzbox to my Chromecasts. I've used the same method to cast music that I can't find on Spotify to my wifi-enabled sound systems.
The integration with Fritz!Repeaters has also been an awesome experience for me, massively simplifying my wifi setup without compromising on features or coverage of my home.
If you still use a landline, the features offered by using Fritz!Fon with a Fritzbox also look really cool (on-modem answering machine, phone book, and basically all your features available to be managed through your phone or desktop, AND you can link it to your phone to call on your landline through your smartphone), but I personally don't use a landline so I can't speak to that from experience.
