If you're used to the heat of Texas, ireland will be cold. Wearing jeans/ hiking trousers will be fine. Bring a waterproof jacket and a fleece jacket and a pair of waterproof hiking/walking shoes. It's standard tourist clothing in Ireland for a reason, as it covers most of the conditions you'll face.
Don't worry too much about the weather. You can't do anything about it. Even in summertime it can swing wildly from week to week, from overcast and cool to bright, warm and sunny. Worry about the things you want to do and see, making sure you don't try cram in too much so you're not rushing everywhere and cutting experiences short.

As a side note, you generally want your phone to charge as slow as it can to lengthen the life of the battery (not daily life, but over all capacity). If you can, slow charge when you go to bed and use faster chargers sparingly.

I cant answer all your questions but I'd suggest Ross Castle as a substitute for Muckross house if you decide not to go there. Also, download the app All Trails it's great for finding hiking spots and gives reviews and descriptions. I know you said outside Killarney but The Ross hotel in killarney is a great spot for a drink especially cocktails, they do food aswell.

It wasn't easy, but I just followed instructions and had all my documents ready at each stage.
Like every Aer Lingus flight, once we were on the plane, was grand. Flight attendants giving him rubs and bringing us free beers.
Edit to add: we also practiced the back pack with him for several months before traveling, and took him to the airport a few times, letting him walk around, ride in elevators, etc. He got lots of treats. So when travel day came, he was well used to it.
