What sticks out to me is the all black bookmark on a landscape sketchbook and the fact that there is no stamp or other brand name. That makes me think that it’s quite a small brand or a very new brand and if it’s some years old that would explain it. Try looking especially for the all black bookmark and the rip away pages as those are in my opinion quite rare in landscape watercolour journals.
The pro line is stylish but the additional tools require discipline and a bit of training. And they can conflict with other time management or planning systems like bullet journaling. the pro workbook is less rigid.
There are many templates you can download and print yourself. You will need a saddle stapler.
I liked the product, too. It was only available in the States for two or three years. The case itself was enough to make me want to buy one but I never did.

I assume that since you bought a 3 pack, you bought the cahiers, which only have 80 pages. Have you considered buying one of the classic Moleskine notebooks? They have 192 pages each.
I'm personally not a fan of the cahiers except for a pocket notebook that is pretty disposable.
Classic notebooks:
Both of those versions have lined paper and are roughly 5.5" x 8". They also have the extra large size, which is closer to a sheet of paper.
