For outside the main movies, High Republic is the obvious one that is ongoing. Light of the Jedi is the first novel and one of the absolute greatest (released in 2021)
Darth Bane Path of Destruction as well is good for this and just saw it’s release as an Essential Legends book, less politics but I think you’ll love it (2007 releas)

The only one that comes to mind for me is Star Wars Stormtroopers: Beyond the Armor. There are a lot of pictures in it but it's not nearly as much as the visual dictionaries or something. It also includes a foreword by John Boyega. You can look at the previews on Amazon and see if it's up your alley or not.
The Science Of Star Wars is a pretty interesting boom that tackles a lot of the science in the universe and how it can be applied in ours
Right now I'm listening to audible of the first Aftermath book. It's a pretty nice intro of how the political environment is after Episode VI. Starts off with a familiar character from original trilogy and introduces a lot of new characters. Has a good amount of action and world building.
I enjoyed Tarkin but that's just my stance on it. I haven't read Catalyst yet. The first books I read in the new canon are: A New Dawn and Lords of the Sith.

But if you're looking for new characters to read about I would recommend starting with A New Dawn. It's supposed to be a prequel for Star Wars Rebels but it also introduces one of my favorite new Imperial characters - Rae Sloane. She makes her first appearance in this novel and gets a huge spotlight in the Aftermath trilogy.
I would also recommend Lost Stars. It's an easy read since it's a Young Adult book but it has some of the highest praises out of all the new canon books. Revolves around two lovers who are on opposite sides of the war.
I took a break from reading new canon. Trying to catch up. Bless Audible :D
