There are so many factors here that need to be considered. Is the place you live in rented or owned by your family? If owned, stop worrying about wireless and run some cat6 ethernet cable to each ps5.
If rented, you might still be able to run cat6 in, maybe consult with the landlord.
If running a physical cable isn't an option, then:
First, understand that your router more than likely is broadcasting two different networks: a 2.4 GHz network and a 5 GHz network. The 5 GHz network is going to theoretically be faster, but the signal will not reach as far. The 2.4 network is theoretically slower, but reaches further. Since signal strength is a concern here, make sure each console is connected to the 2.4 network.
But wait, there's more! (RIP Billy Mays).
There's a possibility that you're experiencing interference, especially if your home is close to another's (e.g., an apartment). You'll want to use an app like WiFi Analyzer and take a look at what channel your 2.4 network and other 2.4 networks in the area are using. For example, if both you and your neighbor are broadcasting on channel 1, you're probably experiencing interference, which is degrading your experience. In the 2.4 GHz spectrum, there are 3 non-overlapping channels: 1,6, and 11. If a neighbor is on channel 1, use channel 6. If another neighbor is on channel 6, use channel 11. If other neighbors are using 1, 6, and 11, try to pick a different channel that's furthest away from one in use.

Hey… Don’t listen to me. I’m an idiot and I was half asleep last night. Been doing some recovery from a few SATA hard drives and immediately assumed it was that. You need something like this for SATA OR something like this for USB connectivity. The latter would probably give you more flexibility imo.

Sounds like you might be a good candidate for Powerline Network Adapters.* Basically they're nifty little gizmos that will transmit/receive data through your power outlets, so that you don't have to run extra cables all throughout your house. In my experience they don't perform quite as well as just running an ethernet cable straight through (I assume that's what you mean when you say "lab cable"), but if you have unreliable WiFi they can be a lifesaver. I use a powerline connection to connect my entertainment center to my router and I have enough bandwidth to reliably stream 4K on my Roku.
*Disclaimer: The product I linked you was just so you could see what they are and what they look like - I have no idea if that specific brand/model is any good or not. There are several companies which make powerline adapters so do some research/read some reviews.
