Ah! I have a couple of good geography recs. First is A World of Curiosities by John Oldale, which spends 1-4 pages per nation (circa 2011) on fun cultural, historical, and nature-related facts. The illustrations and maps are impressive. Amazon
Second is Lonely Planet's Ultimate Travel Quiz Book. It's separated into three sections of quizzes of 20 questions each - easy, medium, and hard - and the questions are very interesting. (As a geography fan myself, the difficulty is really well maintained!) Amazon

I use a big doc on google docs, sometimes making separate docs and linking in the main one.
I would suggest either Google Sheets or maybe Notion which gives you some nice customizable tables and views a bit like a database but with no code required.

Yeah, Wordpress has a learning curve to get in and start customizing your own theme. It is written in PHP, so you should be able to integrate your existing code into it and you could maintain your CSV files as your data source instead of putting it into a database. It's not gonna be an easy process, but it sounds like you're a hobbyist coder. So, you may want to want to tinker around with Wordpress if you have a free weekend.
You can get a free SSL certificate to enable HTTPS from https://letsencrypt.org They are a certificate authority run by the EFF.
I'm a programmer, not really much of an SEO guy, so I can't get to o specific about recommendations on that. Since you are using Apache as your server, you could use mod_rewrite (https://httpd.apache.org/docs/current/mod/mod_rewrite.html) to give your pages more SEO friendly URLS. Take a look at the URLs on Sporcle quizzes and you'll see how they cram them full of keywords.

Not sure how well it will work for your needs, but I've been using Microsoft Forms for my org's surveys and it actually works fairly well for our needs. There's plenty of question type options and it has nice auto-suggestions for answer choices on multiple choice based on the question.

I used to be pretty serious about trivia, studying trivia is the most effective way to get better at trivia.
j-archive.com is probably the best free resource for study. Quizlet has some decent trivia sets (esp for stuff like flags and geography) but it's hit and miss. Graig Zethner's trivia books are excellent resources and have very descriptive answers which help with memorizing. Trivial Pursuit card sets are good practice.
Some lists on Wikipedia are useful for trivia, especially stuff like Oscar winners and Billboard charts etc.
I find it hard to memorize stuff I'm not that into, like baseball or current pop music, but repetition and study do work.
If your quiz has a lot of current events, read the paper every day. Doing crosswords can help with trivia too.
The company I write and host for put out a book that's available on Amazon. I guess some of my writing is in there but I don't get any cut of the sales. I think it's good stuff, though.

Hands down, the best Trivia book on the market. Tons of ideas and great questions there. You can basically run a trivia night for 3 months based on that alone.
