I've instead been using EasyJoin for over a year, The Essential version (isn't on the Play Store) with the Pro app on Windows.
It's free with paid premium features, but none of the things you listed are paid.
The "Essential" version is essentially^^hehe the previous free version before it became a paid app but isn't receiving any new features; only stability and security updates. And the currently developed free app is called "Go", but it's a quite different app altogether and very lacking in features.
Works great in my case.
Can you install a beta version and check if the issue persist?

You can do it by enabling a switch ("Direct connection via Internet") in the app. When you enable the second switch ("Share with trusted devices") you share your IP like a DDNS service. So basically all you have to do is to enable two switches in the app. I'm writing this not to contradict what you've written but to see if the documentation could be clearer on this point. My intention is to offer applications that do not depend on advertising so that users are not tracked. This is a conscious choice, knowing that it will bring me less income.
Play store gives buyers the possibility to ask for a refund so one could buy the app, try it and if they don't like to ask for a refund. For the "Pro" version I extend the default refund period offered by Play store to 5 days, as the app offers much more features and people should have time to try it extensively before deciding to keep it.
Natively files aren't encrypted you could make a feature request here.

Unofficially u technically could find a way to upload an encrypted version of the file to Google drive or write a task to upload to a self host next cloud server and have join simply push the link.

Even if the error is related to something else, the real problem is that the application cannot listen on the default port. For Windows Enterprise users the most plausible reason is because they have enabled Hyper-V , which blocks applications from listening on many socket ports. For those who have tried EasyJoin in the past here are some things that have been added from the previous major version:

Connection is via WiFi but you have to ask to your IT to disable "isolation mode" (they know). Or create an ad-hoc access point / hotspot just for this job.
It's for Android phones and there are desktop apps for Windows, linux and mac.
Can you download the Linux version, install it and run it, following the instructions that you can find in the download page, and see if it works? It's not important to copy the EasyJoin.exe file on ~/EasyJoin/ if you already using this folder, any other folder in ~ could do the job.

Make sure that you have the latest version of the app on all devices.
From the next version it will be possible to synchronize the keys without uninstalling the apps.

If you you only want to share files and not other things, like clipboard sharing, texting from PC etc the Go version is what you need.

There is a portable version of the Windows application if you do not want to install the application.
From a security point of view, it makes no difference whether you install an app or use a portable version or use a browser plugin, because since it runs it can do whatever it wants.
The only difference could be the use of an app that doesn't use external servers because you could block it at firewall level to stay only in the local network and be sure that your data doesn't end up in external servers.

The transfer speed could depend from various things. In order to get some useful information you have to run a benchmark indicating: the sender device type, the receiving device type, the access point, WiFi strength signal, the file size, the time need to complete a transfer.

The signaling is about the fact that the application scan the network to find other devices with EasyJoin.
Since some virus could scan the network in order to find other devices and try to infect them, the least sophisticated antivirus could mark an app/exe file as infected just for it. The more sophisticated antivirus try also to understand why the app scan the network, try to find a malicious behavior etc etc and only if an app has a malicious intend mark it as infected and block it otherwise consider the action for what it is i.e. not harmful and permissible.
Should work on every WiFi network except if the administrator of the WiFi router has modified the default settings and don't permit the connected devices to interact with each other. In that case you have to to use the hotspot solution.
