MacOS comes with a default Documents folder (It can't be renamed). When you use an app to create and save a new document, the app might save your document here. You can save documents wherever you want, or move them to other folders after saving them.
(note: the Documents folder can also be in iCould Drive, this allows you to access your files from all your devices. Learn more about that here.)
Yes, you can in several easy ways, if you click up on one photo so it’s highlighted, you can then use the arrows to scroll horizontally or vertically, easy Peezy. You can also choose gallery view mode.
Think of the screen (Finder) as a file cabinet; you need to open a folder to browse through its contents. In the desktop view, choose command-n (⌘N ) for a new window to start. Read this: https://support.apple.com/en-us/HT201732

A clean install is only accomplished after erasing the disk from macOS recovery. So be sure to backup your relevant data before doing so. If you already have the installer for Mojave downloaded, then you can use it to create a bootable USB installer. I'll link Apple's instructions.
