Unfortunately all of the WebKit based SSB (Site Specific Browser) setups that I've found do not allow for plugins, so hello ads/tracking/etc. unless you have pi-hole installed locally. However the WebKit based SSBs are much lighter weight then the Chrome based ones. However the Chrome based SSBs allow plugins (i.e. Ad-Block, 1Password, Ghostery) which makes using Facebook, Amazon, etc. all a bit more pleasant.

I use a combination of the BZG apps for my SSBs needs and they are actively supported.
You can use the free Fluid app (https://fluidapp.com) to turn any single website into its own Mac Desktop application. You should give that a shot if you really want each site to have their own app.
A while back I used the app Friendly Streaming (https://pcmacstore.com/en/app/553245401/friendly-streaming) to be an app dedicated to audio and video streaming websites, so it was separate from my primary web browser. I have Netflix, YouTube, Amazon Prime, Disney+, LivePhish+, Relisten, and SiriusXM all loaded into there.
It wasn’t Unite 4, but I appreciate knowing about it now. It’s an older app called Fluid. At the time it was one or two of its kind, but the dev hasn’t caught up with newer macOS and there are so many competitors now; I imagine they’ve given up. Although if that’s the case, it’s a shame the app is still for sale.
You can try using Fluid, as it can convert a website into a desktop app. The only major con is that you can't use the app in Full Screen mode.

Yeah, their app is bad, but the issue is that with the ubiquity of electron.js (a library for making apps from websites), what you're likely to get is just the webapp in a wrapper.
For what it's worth though, you can do that using Fluid right now and get the LivePhish+ app as a separate application on your desktop! I too spend a lot of time at my workstation, and this was what I ended up doing.
I don't know if they support it since it's never been a need of mine, but you could check out Fluid or Nativefier.
They are built on Electron and not webKit, but they both create desktop apps from websites. You may have luck with camera/mic support on either of those.
The best part for me about this is that it lets you do a 100% feature complete compact mode (Feature complete, as in what you can do in the web app).
I have a keyboard command to make an app 1/3 screen size on the left or 2/3 screen size on the right of my screen – that way I can organize my screen with minimal effort. The real Music app had to go in the 2/3 category even though I didn't really utilize the space any better than if it were compact. This is so much better for me.
I just used the app Fluid to make a separate single site browser so it's pretty much indistinguishable from a real app for me. It even works with the media keyboard control keys.
There are a few ways. You could just use a chromium-based browser like Microsoft Edge. Navigate to a website you want to create as an app, go to the settings menu, apps and select 'install this site as an app'. Another option is to use Fluid app - https://fluidapp.com/ . I quite like Fluid on macOS. There are other possibilities, but many have glitches.
Once a web app has been created you can pin it to your taskbar and use it like a regular app.

This one allows user scripts and user styles as an inexpensive premium feature, which is a good start. It's not as good as a full extension but it may be enough for my purposes.
Hopefully so. I also use Fluid to make my own web-based apps for Gmail and Google Drive (https://fluidapp.com) and the icons for those apps are mysteriously gone entirely, showing only the blank app icon. I've tried clearing the cache multiple times after successfully replacing the Messages app icon. There's definitely a cache issue.
