If you plug your iPhone into your computer and open QuickTime you can select "New movie recording" from the File menu. In the window it opens up you can select your iPhone as the device at the bottom of the screen.
AFAIK that only works on OSX Yosemite but you can use LonelyScreen if running Windows.

I do it using my PC and LonelyScreen. My PC needs to be on the same WiFi network as my iPhone, then I can AirPlay to the PC. It is free.
If you're talking iOS as in Mac, then I heard QuickTime natively has the ability to record.
EDIT: And I second the request for video. This would be quite entertaining to see!

You could probably try using AirPlay to send the screen from your iPhone to your PC. There are several free programs that can make your Windows PC receive a screen via AirPlay. I've used Lonely Screen to capture my Mac screen on my PC - http://www.lonelyscreen.com/
Hope that helps - the quality should be more consistent than Skype and probably have less delay. You can game/window capture Lonely Screen on OBS.
