I used to use titanium backup (still have it installed and use it to share app data across devices) until I discovered NandroidManager. This app is used to manage and create nandroid backups (you can make a nandroid without turning off your device!!). The cool stuff is that you can restore the data/recovery/call logs/sms from the backup, with a nice and clean interface. Instead of having to backup all my apps with Titbup every time I flash a new rom, I just make a nandroid backup (that I would do anyway, using TWRP or CWM) and after flashing everything I just install the app from the market and select which apps and data I want to restore from the backup.
Extra and nice features are: Manage backups (delete, compress, etc), check md5 sum of your backups (to see if it is ok or corrupted), flash recovery images (from a nandroid or using a .img file), restore wifi access points names, etc.
I definitely agree, but even if you can't restore your backups, not all is lost. You can use another app by the same dev, Nandroid Manager * ROOT, to browse nandroid backups, and pull data from that.

I just take a nandroid with TWRP and it can extract most things from it. The pro version has quite a few more features too.
You should be able to tether with the built in settings now both with WiFi and via USB :)
Now that you have that all sorted as a root user I recommend checking out Android Tuner, Nandroid Manager, and Titanium Backup
Android Tuner is an all in one tool that combines features from many different root tools into one app. nandroid Manager is a manager for your Nandroid backups (the ones made from recovery.) Titanium Backup is good for if you ever decide to change roms. It lets you back up all your apps so you don't have to go through the store downloading them one by one again.
Edit: for future reference if you decide to go back to stock for some reason make sure you don't get OTA upgrades (should not be a problem with custom ROMs) unless you are ready to unroot and remove CWM (for selling the phone or trading it in at Verizon because that will put KNOX back on.

I've taken to making nandroids and using nandroid manager instead - it works a pretty large portion of the time (it does sometimes fail, but that's usually due to the specific app doing things weird)

I don't even bother with Titanium Backup anymore, just make a Nandroid and restore from that. For pictures, just don't wipe /sdcard and you should be good. If you have your contacts sync up with your Google account, they'll be downloaded onto your phone after signing in with it.
What is typically called a bootloop, is where it never finished booting up and just goes through the bootloader and the startup animation, repeating endlessly; never getting to the home or lock screens.
That doesn't help solve your issue though...
I'm not sure what all you did to root it, but I'm going to hope you have a custom recovery. If you do, try booting into that and then clearing the cache there, and also running fix permission. You could also try reflashing the ROM you are currently running, without wiping data, that might help.
At the worst you could always make a nandroid (full system backup) in the recovery and flash a new ROM, then use a tool like nandroid manager to restore your contacts and texts from the backup. (assuming your new rom is rooted)
That's all the help I can give, as I have never actually dwelt with the i9300 personally.
If you make a nandroid there is an app that can pull individual information off of it. You could restore your call log or SMS for instance.
