I currently use OpenBoard. It's open-source and available on F-Droid. I'm thinking of blocking internet access to OpenBoard with a firewall like NetGuard just in case. Otherwise, I am quite satisfied.

Openboard di default non chiede nessuna autorizzazione, al massimo puoi concederli la lettura della rubrica per l'autocompletamento in fase di digitazione.
Io la uso da un anno e mi trovo benissimo (bella graficamente e ha tutto ciò che mi serve)

Yes: the answer is that it doesn't, according to this thing the developer posted, saying that they were just the permissions the AOSP keyboard has, and so he simply hasn't changed them in his fork, but now that he knows, he has removed the unnecessary permissions.
I've obtained this information in the "not so clear" official F-Droid chat on Matrix, FWIW.
Sadly, this also has the "show all emoji skin colors individually, making the emoji selection ridiculously cluttered" issue that AOSP's Keyboard has. And the inability to blacklist words from the default dictionary. The only two issues I have are still present. But at least this one has a public issue tracker I can submit to.
