Why not just use Sonarr and Radarr ? They do a very good job of keeping files organized and renamed in a way that Plex has no problems with. (Even if this isn't their main purpose)
I also use this free alternative for tv shows and animes, might be worth your time.
For anime I've given up on trying to force jellyfin to identify my files using anime plugins and their original naming scheme and instead just hardlink the files to a folder I've called Jellyfin Anime and rename them there using Rename My TV Series 2 per the tvdb naming scheme, then Jellyfin scans them immediatly correcty with the default tvdb plugin. It works everytime and because the files are hardlinked I can continue to seed them in their original folder while the new folder doesn't take up any space and has the "correct" naming.
Wow - thank you for undertaking this labour of love!!! I will be sure to let you know if I spot any other sources in future. As for renaming the files, you probably know about it already but if not <strong>RenameMyTVSeries</strong> is an excellent time-saver.

Look into rename my TV series. Just adjust the default format to add the year, select the episodes, select the files, click...like magic. I'm a little OCD so I use this on all my TV shows.
I like using RenameMyTvSeries for just renaming files. If you're having trouble with Sonarr, I wouldn't spend too much time on it, because it's kind of overkill to use it just for renaming files.
Download Rename My Tv Series, it's a free program that does exactly what FileBot does and with probably the same level of customizability.
For onesie twosie renames, I go to IMDb and find the movie. It just happens to have the correct naming format. Copy > Paste > Done.
For TV shows, I really like Rename My TV Series 2.

Use any media manager to rename your file. I use filebot. But any media manager that uses TVDB/AniDB would do. Like Rename MY TV Series 2, Ember Media manager.
My Naruto folder structure is like this.
I really only do it for TV series and don't add that many (maybe 1 show per month, if that much) so I've just been using Rename My TV Series 2 and it works fine for my needs.

Use a program that will automatically scrape TVDB and other databases for their metadata.
It's as easy as drag and drop and it's free. Even though Plex does not use TVDB's Sagas episode ordering that does not mean you have to change the folder structure in Windows Explorer but just the file names themselves to reflect the air date order that TVDB and Plex wants. So you can leave your videos in the Windows folder that they are in but when you drag that folder containing your videos into 'Rename My TV Series' that program will rename the episodes only so there is no manual editing on our part except dragging and dropping -- job done.
However, TVDB currently has an issue where someone has tampered with and messed up the Specials episode ordering and Plex isn't seeing the metadata changes made on TVDB.
I think that's probably it.
I use https://www.tweaking4all.com/home-theatre/rename-my-tv-series-v2/ to rename all my series, strange that this pulls data from TVDB and it did get filenames for Season 5.
This is how the backticks got in the filename too, it pulls the filenames from TVDB, but it has the option to replace or remove special characters, think I'll set option to remove them even though it isn't causing a problem with that episode.
So when it comes to playlists the syntax is pretty similar. I think you could just use a better understanding as to what it all means.
If you playlist has the same uploader for all videos and you want the directory to be Uploader/Playlistname/ and then formatted for Plex, here's what I would do:
youtube-dl -o %(uploader)s/%(playlist_title)s/%(uploader)s-S01E%(playlist_index)s-%(title)s PLAYLISTURL
If I were to, say, download a Cinemassacre Board James playlist, it will download the video to the following directory: Cinemassacre\Board James!\Cinemassacre-S01E01-Mouse Trap - Board James (Episode 1).mkv
If, however, your playlist has a lot of other uploaders you'd just move the first uploader directory out of the string.

When it comes to building directories, you simply need to put a "/" after the thing you would want to be the name of a folder and Youtubedl will take care of the rest. When working with playlists you can use the playlist_index property to number your episodes for you.
Alternatively, if you're downloading a popular youtuber's videos who does do seasonal episodes (like AVGN) you might be able to get the season numbers, episode names, etc. updated using Rename My TV Series (a personal favorite program of mine. Bless the creator.). But, that's not really necessary, just a nice little program I wanted to throw out for making Plex work that much better.
I originally used Rename My TV Series but switched to FileBot so I could easily rename movies and music files.

As u/amorphousbacteria pointed out, FileBot is only $6 per year or $54 for a lifetime so I'm not sure where you're getting $70 from.

Just get rid of file bot cause it's a pile of shit. Replace with Rename My TV Series 2. I just tested the new beta for him and am extremely happy with it. Been using the official version for a couple of years now.

Use a renaming app to keep the naming consistent, it will make everything much easier. I've never had the scraper skip an episode using one. I am currently using Rename My TV Series 2

Not exactly the same as Filebot (seems you have to go season by season to do the renaming), but it's about 95% there and FREE.
