I've had the same issues, and went to a Trello alternative which runs on my laptop and gives me both security and access without internet. I've migrated my Trello boards to it (via JSON export/import) and it gives me all the features that I used in Trello. It does not have a mobile app (because it's not hosted on the internet), and it's not a collaborative environment (because it's not hosted on the internet). But it gives me everything I need for personal project tracking. The developer is very responsive, and while there is a payment required for the "pro" version, it's been (in my opinion) a very reasonable amount for the functionality obtained.
I use stacks for organising my work.
It's basically a one-time payment, offline Trello alternative for freelancers. It uses your local folders as well so just bring it around on a USB and you'd be good.
Additional features that may interest you 1. Ability to create notebooks 2. Nested folders 3. Kannan automation (move to done, change tags etc.)
I don't work for them but it was recommended to me on r/selfhosted and I've been using ever since.
There are also much better alternatives. I've been using Stacks as my personal Kanban tool. There's a free version, but the paid-for version is quite inexpensive. I have it installed on my Windows10 laptop and a backup machine. The attraction (to me) is that it runs locally, and that the developer continues to work at enhancing its capabilities.
Then what you are asking for is probably ToDoList, or something like a Kanban / Wekan / Trello. Or for offline usage wekan-like: Stacks. You can create progression-like plans with all of these. Not sure if there are alternatives for goodreads and rateyourmusic with progression plans. For Anime, Myanimelist maybe has some progression thingy, like you can set up what you are currenty watching/reading and how far you are.
