It depends.
Here's the 2 situations where they can do it.
If you don't do either of the above, then no. They can't see what you're doing on your phone.
You have to install air watch (link below)first. Once done- There is some form you have to fill out on the mobility services share point that requests UWO and then its pushed to your phone

I feel I should clarify a few things. At 0:24 in the video, we see a document that says "TEAMWORKS Mobile App ... Quick Reference Guide" across the top. This document shows us most of the important information we need to know about the app.
I know from going to Starbucks and overhearing the workers, that they refer to all of their employees as "partners". Also, the document references things like "schedule for the current week" and "meal and break information". These and other details make it clear that this app is intended for regular employees.
The document also refers to the "Intelligent Hub" app, which is required to install the Teamworks app. You can see its Google Play page and click on "Permissions" to see what the app can do. These permissions admittedly seem slightly less extreme than what we see in the video.
Finally, the video says that employees are required to install the app, but I can't independently verify this. After looking at the document more closely, this seems doubtful.
You have to use one of the computers in the store to sign up. Log onto One Walmart and search BYOD. You'll have to go through a sign up. You have to wait 2+ hours for your user to be setup. Then you'll be able to download the Intelligent Hub app.

The username is unique and isn't the same as your Walmart ID.
Then your password is the same.

The installation process is....overly complicated lol. You have to install the Intelligent Hub app (https://play.google.com/store/apps/details?id=com.airwatch.androidagent) which I think (???) is related to the Partner Hub app on the computers and iPads, and then install the Teamworks app from the Starbucks "App Cafe". I finally got the app to actually install, but all I ever see is a continuous spinning circle when I open it.
It's not Starbucks App, its owned by VMWare, a company I actually trust. The app needs this permission to remotely control the Phone for Example to remote Support when something is wrong. Maybe Starbucks isn't actually using any of the Device Admin features, as it offers a lot more (useless) stuff.
But apparently the App is not to well optimized.
