Found this app just yesterday, and currently testing it out. It seems to work pretty well, and the developer was clever enough to turn off gestures when you're on "do not disturb." Not sure if it affects battery that much yet.
If you want it to do it repeatedly, try Ambi-Turner, which allows you let it flash for some time and change some of the ways that it works.

But I just couldnt get it to work right... it can change the ambient display but i just looks awful. Perhaps i was just too stupid to use it...

There's an app i got before they enabled tap to wake that would also emulate wave to wake. It worked, but not nearly as well because of the single sensor on the Pixel vs the 4 on the Moto X.

Apps like Ambi-Turner allow for checking notifications (I think it's free. I'll have to double check) and the shaking gestures can be enabled through apps like Gravity Gestures
My Pixel lets me do that using this app https://play.google.com/store/apps/details?id=com.compass.ambiturner&hl=en . It works fine on my Pixel but if you have a Pixel XL I hear its less consistent.
Op I would try out this app called ambi-tuner it's a section to this ambient display on the 6p. Adds alot of options and might solve your wake issue when the screen is off.

I'm a fairly boring user. So, I don't really watch a ton of videos and I play almost no games (maybe a hour a month, probably less).
When I got that the other day, I was home sick and I was on WiFi all day just reading reddit, imgur, feedly, and Google+ with the occasional Chrome tab open.
However, I do have things that aren't exactly battery friendly either. I have Life360 which updates my location (with GPS) every 15 minutes (usually for only a second or less) and Smartthings, neither of which is battery optimized. I also use Ambi turner to control the ambient display on the Pixel. Tasker is also not battery optimized and is running some tasks in the background. I have location set to the most battery unfriendly level (because I use it to coordinate with Smartthings).
The vast and overwhelming majority of my day I'm on WiFi. In fact, barring unscheduled side trips, the only time I'm not on WiFi is my 12 minute commute to work and 12 minutes back to home.
Typically, my phone comes off the charger around 7 am and goes back on around 9 or 10 pm. At that point, if I haven't really looked at my phone too much, I'm somewhere around 80 something percent. If I've been browsing a lot of stuff on the phone while my wife watches some detestable TV show, my battery may be in the 60s.
there is a 3rd party app that adds wave to wake to the stock ambient display. played around with it on my 6P last weekend but i just don't care for ambient display, it would light up every 30 seconds in my car for some reason, but that's on google not the app.

Sorry, that isn't double tap to wake. It is wave to wake. But still nice to have.
