Seriously, though, why stitching panorama from images was ditched in favor of swiping method? Stitching worked almost flawlessly and resulted in better images without issues experienced by OP.
My Honor 7 makes panoramas by swiping with the main camera but does stitch when making them with front camera (so it makes wide selfies)... Guess which one works better.
Anyway - I recommend everyone to try Bimostitch. Sure, it's not as fast as swiping, but panoramas are simply better. Or Image Composite Editor if you're on Windows - it's free and even better. In both you can stitch horizontally but also vertically. ICE can generate panoramas from videos (!) with some nice effects too.
Agreed, they should put panoramas under the "Create new" in the Assistant tab
And most people probably dont even know its a feature. Google should also have some info on what Assistant can do in that tab
This app is useful if Photos fails to recognize a panoramas, I don't think it recognizes Multi Row panoramas unfortunately.
Not sure if there's an app that can do Multi Row panoramas on Android. On Windows/mac you can use Photoshop, Affinity Photos, Microsoft ICE, PTGui, Hugin Autopano, ...
The panorama mode in the stock app stitches multiple shots horizontally or vertically. The spherical mode in the stock camera also stitches, but warps the images to create the spherical effect (Photospheres).
Bimostitch might be what you're looking for.

From my personal experience swipe panorama always suck - even phones which did it by stitching images one to another (when you had to overlap part of them) did it rather poorly. Solution is a third party app that uses some advanced algorithms, like Bimostitch which is at this moment probably best out there on Android. There was nice app similar to Bimostitch (sorry, can't remember the name now) few years ago but it's authors were hired by Google and the app was removed from the Play (funny thing is it was best in it's time and was a paid app - it was worth every cent back then)...
Anyway, if you really care for panoramas - do them in old fashioned way and stitch images in Bimostitch. On Windows there's a free app by Microsoft called ICE - Image Composite Editor which is even more advanced and has nice UI that makes it really easy to stitch images (and more features - like creating panorama from a video!)
My suggestions are <strong>Bimostitch</strong> for manual panoramas (stitching several overlapping photos) and <strong>Street View</strong> for Photospheres.
When you say long do you mean a panorama? Your default camera app has the power to take these.

While you won't get an on screen guide that will lead you and show you which area you should photograph step by step, you can do 9x9 and other combinations in Bimostitch. You have to make all the photos by yourself (stick to the plan and remember to make them overlapping each other a bit) but this app is probably the best you can get when it comes to quality.
Bimostitch Panorama Stitcher is the best out there but be careful with settings and resolution - highest settings require huge amounts of RAM. Stitching 3 20mpix photos (each about 15-20mb) on 100mpix setting sometimes hangs the app on my phone (equipped 3GB of RAM) but most of the times work fine.
If you're really into panorama, then you should try Bimostitch. It's not the same as swiping way of shooting panorama images but you can, for example, stitch images taken in two rows which greatly expands your possibilities. Also, most stock and swipe panorama cameras shoot them in lower resolution than full camera res and almost always with some visible stitching errors. With Bimostitch you can stitch full res images that in result might give you 100mpix panorama and it's pretty good at aligning images so outcome is better in quality.
Downside is that you shoot images manually and stitching images, while automatic, takes more time and needs a lot of RAM memory...
