As others already mentioned the subway is not operational at 3 am. The BKK futár app can help you with your planning. Also I would recommend to get a taxi. Compared to other countries taxis are relatively cheap. Depending on where you are the taxi from the city will cost you about 15 - 20 €

There is no mention on any of those topics. I don't think they went to great lengths to create this map. The given times seem to be the same that google maps gives you.
Regarding your question on reduced mobility I don't know how well the city itself is built with accessibility in mind but I do know that many metro stations (for example all of M1) are not easily accessible for people with reduced mobility. However there is a page that lists the alternatives in such cases and their route planner website and mobile app show low-floored/accessible vehicles with a different icon.

It shows you where trams/buses/metros are in real time on a map. It also shows live departure times from each stop. I don't think it shows long distance coaches and trains.
For route planning, I don't use these. Google Maps does a very good job planning with public transport, so that's what I use. But I use the BKK Futár app to see where the bus is, while I'm at the bus stop waiting for it.

For public transport you should download the Budapest Go app, it has really simple instructions on buying a ticket. You just select the city and how long you want the ticket, you can get a 72 hour travelcard which is what I'd recommend, you can also buy an airport shuttle ticket from the app.
The tickets become valid 2 minutes after purchase
You can validate a ticket in 3 ways
If you're taking a bus you have to board at the front door where you'll see a QR code that you need to scan from within the Budapest Go app with the 'scan' button. after it's successfully scanned a simple animation will appear on your phone that you'll have to show to the driver
If you're taking a metro you'll have to click a funky looking letter M (it's the logo of the metro, kind of like the roundels in London) after clicking it will list a couple of nearby metro stations and lines, you'll have to click on the station your boarding at and the line you'll be taking, this will pull up an animation of the same kind as on a bus that you'll have to show to the inspector standing by the automatic ticket punchers. Do note that Budapest metros do not have any operational fare gates meaning the gates you might see in Deák Ferenc square are for a failed mobile ticket project. if your station or line doesn't show up in the app you can select it manually.
This is for when you're taking a tram, upon boarding you don't need to have anything ready as nor the trams or the metros have fare gates, you just get on, the only case you need your ticket on a tram is if an inspector is requesting you to show it, this happens like every 2 months so it's not something you'll have to worry about. If a ticket inspector still comes your way and asks for your "jegy" or "bérlet" go into the app and next to the funky looking 'M' you'll find three dots, once you click on that click on present code to inspectors, this will pull up a QR code that the inspector will scan. If you click on the QR it will make it bigger and the app will make your screen brighter so the reader machine has an easier time scanning it.

I wouldn't recommend Carsharing for exploring outside of the city as you can't park them outside the borders of the city (you technically can but it will keep paying every minute) instead I'd recommend taking a train or a suburban train for going out of the city. Suburban trains work the same way as trams that you only need to show your ticket when the inspector comes but if you go outside of the city limits ie: on line H5 after Békásmegyer station you'll need to buy an extended ticket to the station you're going to. You can buy these in ticket vending machines at major stations so if you're going to Szentendre (a beautiful town north of the city) you either buy the extended ticket at a major station in Budapest or if you get on at a smaller station you'll need to get off at Békásmegyer (or any bigger station for that matter) and get an extended ticket. The trains run every 10 minutes so you should be fine getting off just to get on the next one after buying the extended ticket.
Trains work the same way, you can use your regular Budapest travelcard in the city but you'll have to buy a separate ticket if you're going out of the city ie: an S72 train to Esztergom (a town northwest of the city with a beautiful castle)
Another way of getting around town is with an E-scooter, I'd recommend the Lime app as they have really good scooters, there's also an app called Tier but I haven't tried it yet

Budapest local here. Public transport is pretty good, though subway/metro line M3 is a bit messy at the moment because a section of it is being renovated. You can use Google Maps, the BKK FUTÁR app (official) or Menetrend.app (3rd party) to plan routes and see timetables. Both BKK FUTÁR and Menetrend.app have live vehicle tracking for buses and trams. There's an app for buying e-tickets, but it's way too complicated IMO. Just go with paper-based ones.
