I know Cinema 4k and Cinema FV-5 are pretty good apps to look into for filming.
No, not with stock but I recommend Cinema 4k! Pretty awesome app for filming. It's free if you're ok with filming less than one minute per clip.

No idea why it's got 3 stars, maybe it's not very compatible with other phones? Works great on my G4...

Always default aspect ratio (4:3)
Super low light -> Gcam nightsight
Most regular photos -> Gcam
Photos where big dynamic range is needed (sunsets) -> Adobe Lightroom HDR (it's a proper HDR implementation, takes 2 or 3 exposures, but takes a long time to process)
Video -> probably stock, although Cinema 4K app produces incredible results and has manual controls, same with Filmic Pro (expensive, but there are ways :) )
Feel free to correct me if I'm wrong, but from what I've read recording video to USB storage is very taxing on the phone and might not work well for higher bitrate videos. I've personally have had less than satisfactory results recording high bitrate 1080p video myself (app crash right after the recorded video is saved) but have not tried lower bitrates.
Additionally, a good amount of manual controls are included in this app!

Third party camera apps will provide extra controls in situations you're looking for a specific style of shot (ie. long exposure shots) or extra editing room through RAW. There's also an app like Cinema 4K which allows you to shoot with a flatter color style for the purpose of color grading.

That's definitely not the case here. The third party apps work seamlessly with the hardware and software.
I've personally found the Cinema 4k to be the best to shoot videos. Manual Camera, Pro shot and Open Camera are really good too.

A parte da estabilidade da imagem é que seria mesmo importante melhorar IMO. O ideal seria um tripé mas, enquanto isso, eu apostaria em estabilização digital. Até o Google Photos tem uma ferramenta rápida e bastante satisfatória para o efeito. Para começar parece-me um excelente caminho. Um workflow rápido para teste seria estabilizar clip por clip antes da montagem do vídeo.
Um pequeno aparte. Para além da estabilização, aconselhava a perder um bocado de tempo a tratar a imagem. Um ligeiro color grading não ficaria mal. OP, se usas um telemóvel para gravar, começaria a gravar num perfil flat (estaapp é mt jeitosa para o efeito) e a dar um jeito nas cores posteriormente. São pormenores simples que dão um ar muito mais profissional (e sério) ao produto final,
Edit: Mais uma coisa. O ideal seria gravar a 4K e exportar depois em 1080p. Não me preocuparia com 60 fps por enquanto. Isto são tudo conselhos muito espremidos, há muito para explorar nestas entrelinhas. Boa sorte
