There is an app that lets you change the brightness depending on if it is daytime or nighttime where you are located. It also adjusts the brightness based on what activities you are doing such as walking, driving etc.

I'm giving Display Brightness for Wear a spin (https://play.google.com/store/apps/details?id=com.danvelazco.wear.displaybrightness) . But I'd kind of like something a little dumber based just on time of day.
1 - On your watch: Settings > Sound
2 - I use Display Brightness which sets the brightness automatically based on your activity.
During the day, if I'm driving/walking/running/cycling/etc, I've got it set for max brightness. If I'm idle, usually I'm inside, so I've set it to medium.
At night, everything is set to medium-low.
Its effective and rarely have to manually triple-press for brightness boost (usually, I'm sitting on a patio somewhere).
3/4 - Go into Fit settings on your phone and enable Goal Notifications and Announcements. You can also set goals and it'll remind you and encourage you.

I use it for over a year now and I never manually change the watch brightness... But as far as I remember lowest brightness means no ambient mode(so the next higher is the proper lowest brightness)
It might be doable but I doubt it. (I don't have a Wear device so I can't say for sure.)
There might be another app that suits your needs, like this maybe?

lt's a bit difficult to set up though, it requires installing an app on both your watch and your phone.
When I had a HW1 (no brightness sensor) there was an app that would adjust brightness automatically based on time and even activity. With my HW2, I don't need it anymore but let me go see if I can find it and link it here.

I spoke to the dev of this app yesterday and he said he is going to be updating the app in the near future. I'd prefer something like that combined with this app but currently his app messes with the brightness. Once that update is launched I'll be a happy camper. That is, unless someone releases an app that will just tie my brightness to my phone's ambient light sensor... if that's possible.
This app sets brightness to lowest after sundown. On my G Watch, this disabled always on after an update to wear.
I copied the script for setting sunrise and sunset from elsewhere. It downloads the sunrise and sunset hours and set two Tasker variables so you can use that elsewhere in Tasker. I'm using AutoWear to do the actual job of setting brightness but there might be a cheaper/easier way to do all of this now since I've had this set up some time ago. Specifically, if you can get this app to work then you wouldn't have to bother with Tasker at all (I couldn't...)

That app works great for me; I installed it the day I got my watch and have never had a problem.
Its not quite as good as having a sensor, but it'll do for me. During the day, I have all active activities (walking, running, driving) set for maximum brightness and the just-sitting-around set for medium. At night, everything is set to medium low.
