I bought this one from Google play store. I wanted something that showed me low histamine foods quickly and this does that. It also includes other allergies and sensitivities. I do feel the UI is very basic for the price. I think it's a bit overpriced. But it is handy and accurate.

You just choose fructose in the sensitivities. It doesn't reflect 100% what I can safely digest – eg. kidney beans are color-coded red (because of oligosaccharides which may be problematic for sensitive people, no fructose/fructans though) but I have no issues eating them.
Besides the protein you mentioned, you can do potatoes (in skin), rice, oatmeal for carbs. For veggies, spinach is safe, I can also do avocado and celery in limited amounts.
This is the best app out there available. It will guide you and others that are trying to stay away from high histamine food.

Not an advertising. I've been using it for years, pre-Covid crisis. Extremely useful.
If taking antihistamine doesn't work then you need to look at other issues.
So before I answer your question you need to keep records. You will forget stuff and you need to be able to track what's going on.
I keep a excel file on onedrive so I can access it via my PC and smartphone. I keep track of what I ate preceding an event, time, date and the meds I took ie 500mg paracetamol, 10mg loratindine. I also msg my significant other so if I'm too sick to open the file I can just search my message history
So symptoms lasting several days... Sort of.

I take my antihistamine and it goes. Then I feel cold and flu symptoms (not covid)
It's been such a consistent and unique symptom.
It's sounds nebulous but after my brother died 2019, followed by my grandfather and grandmother in 2020, and followed by my cousin in laws non covid death early in 2020 (single mum who left 5 kids) and a mountain of work (created by covid craziness) lead to one of the most stressful times of my life.
And to boot I quit drinking ten years ago, don't smoke or take any drugs. Shit I even gave up my nitrous oxide addiction ten years ago.
So it's been a crazy two years and I definitely had episodes caused. By it.
However for me it's definitely unusual and not as intense as the first two root causes.
Back to duration.
Let's say I eat some dodgy takeaway. I've had insistences where I've had the AH work but then on the 19th hour it's worn off and the episode has resumed. This happens if the food is especially rich in histamine and or if I've not expelled it.
Old fruit that I was eating fresh, that still looks OK is especially bad for me and I can have symptoms last two days.
Others can't look at fish anymore whilst I can eat small quantities. Commercial sourdough is fine for me but artesian fancy sourdough will set me off if I have more then a slice.
I can eat fancy wagyu but if it's 48 hours in the fridge then it's all over.
You need to work out what your triggers are, quantities and qualities matter.
Isn't maple syrup also rich in fructose? I've bought a bottle of rice syrup today, I'll try it out tomorrow.

I've had mine since my late teens, I always get diarrhea when I get nervous or stressed, but a couple of months ago I started getting bloating and smelly gas after pretty much every meal and a change between constipation and slimy soft stool. I am not sure if that is only to blame on lactose and fructose.
Is there anything I should look for specifically? I have rarely seen fructose an an actual ingedient on the label, aside from maybe isotonic sports drinks. I kind of have a mixed one, I've had pretty normal stool when I was not nervous, it has just been the last couple of months that have not been normal. I'll ask the doctor about IBS. In my opinion it is IBS alongside the two intolerances.
A barcode scanner would be a damn life saver! I have that Monash app too, that was easy to find, but do I even need a low fodmap diet if I don't suffer from IBS but only the two intolerances? What's the deal with soy? I've read something about fructans, but then again, there is so much I am not supposed to eat, I honestly lost the overview.
They sound really helpful, yes. The app I linked you above has a database of like 700 food items, but I am not sure if I should trust it. A lot of these list you find on the internet seem to contradict each other, especially on the fructose.
That would mostly be meat haha. I've read that those foods high in fibre are not that good for an "intolerant" digestive system either. I love lentils, beans, chick peas and especially oats. Those are all reat protein sources as well. What's the deal with nuts? can you eat them? The stuff on the with regards to fructose is kinda confusing.
Guessed right, I am from Austria :) The germans call it Quark, but I don't know if it is even available elsewhere. Pretty good protein source too, though. I think I might just go for the "lactose free" products and hope that helps. Most cheeses I like have 0 grams of sugar anyways, so I guess that won't be a problem. I don't know if dairy causes problems for me in general, but I'll figure that out!
As of right now, it feels like a huge burden to carry. I have been a very picky eater for all of my life and this feels like it subtracts another 75 percent from my already limited pool of foods haha. I really cross my fingers that it does not get worse lol.
