If you've got G3 Tweaksbox installed, it offers a few options for lockscreens, nothing too game-changing, though. It only works on stock-based roms, which you obviously have if you're using knock code. I used the option that removed the brackets from knock-code input so it just looks blank, which makes people have even less of an idea of what's going on, and shows off your wallpaper more a lot clearly; which in my opinion looks so much nicer than stock.
There's a few other options that I can't exactly remember, but there wasn't too many options to make it look prettier besides that, sadly the ugly 'emergency call' and camera slider elements weren't modifiable when I used it.

If you decide to root your phone, there is an app for lg g3 phones called G3 TweaksBox which allows you to change it and a whole bunch of other stuff.
G3 roots are available for many models.
You can then try to tweak the notifications drawer to match stock Android, though replacing the full thing will require a new ROM.

Root then, install G3 Tweaksbox from the Google Play Store. Then, install Xposed Framework. After that, enable G3 Tweaksbox. Go to Call settings in G3 Tweaksbox and tap on disable in call floating timer. Done! Xposed Framework G3 Tweaksbox
I'm not sure about fonts, but the nav bar icons can be changed by default under
Settings > Display > Home Touch buttons > Color.
You can find a few themes on XDA. Height and even more color options can be changed with G3 TweaksBox.
The AOSP term for it is called the navring, but LG calls it the "ring pad". You can't customise it without root and a special software, unfortunately. And even if you root, there's no guarantee that it'll work - the only app that I'm aware of that can change LG's ring pad is G3 Tweaksbox but as you can tell from the name, it's designed for the LG G3 (and yes, it requires root and Xposed).
As an alternative, you could instead install App Swap which will completely override the ring-pad with it's own customisable launchpad.

SELinux should be in permissive for xposed to work. I'm not sure if G3 Tweaksbox is working on Lollipop yet. Based on Play Store reviews and XDA thread, it doesn't look like it's been updated yet.
Even better, if you're rooted, why not put G3 TweaksBox onto your phone. There is a modification when using G3 TweaksBox so that you can double-tap a blank portion of the navigation bar to lock the phone. Which is pretty fantastic given the size of our phone.

Once you've got Xposed installed, you can get G3 TweaksBox for KitKat or Lollipop (it says beta for Lollipop but I've been running it without any problems). I also like the MinMinGuard, Network Speed Indicator, NoSafeVolumeWarning, NotifyClean, and SwypeTweaks Xposed modules.
To me, at least, Android is all about customization. That being said, if you want to get her into the customization mindset, start her off with these apps:
You can root on 11C with IORoot, but downgrading to 10B and rooting with Stump is quite easier, indeed. You'd need to install TWRP to install custom ROMs, meaning that you'll be bootlooped if you try to upgrade a stock ROM with TWRP installed. You'd need to reflash to stock completely.
Illusion 5.5, it's what I use and it's great. It's an Android L (5.0.2 ROM) and it's quite stable. I use it, and I have better battery life/performance than I ever had on stock. Though, I did modify it myself with FauxClock. It's even stable with the Xposed framework for Lollipop (which is in alpha). It's been my daily driver for sometime.

Also it seems that a new Illusion version is coming very soon, that you will most likely be able to dirty flash to. :)
AS for features on Android L ROMs, it's about the same on all. I don't know if other ROMs have got PIE controls just yet, but Illusion does.
