Can I get a definition of what you see as easy?
My SO (basically as dumb and uninterestedas it gets regarding tech) and me are both on Android and use K-@ Mail (Pro) together with f.e. APG or OpenKeychain.
Creating your keys is a 5min job (depending on your systems CPU) and can be done either on your desktop(then copy to phone) or directly on the phone. Essentially it's just a few clicks and entering the name and/or email.
From that point on, encrypted mail comes, enter password (option to keep it in memory for time X exists), done. For convenience we use an NFC enabled Yubikey so that just needs to be hold on the NFC reader once the popup for the password shows.
Is it "super 1-click easy"? Surely not, but high security always comes with complexity, that's by nature and anyone that cares should imho just spend the time reading/setting it up.
From my pov, a combination of "easy enough, good enough and I just trust a 3rd party with commercial interest in my data" isn't good enough for deeply private things, but to each their own as long as they see they themselves are at fault if something goes wrong.
