If you don't mine streaming then there are a LOT of games available.
This is my set-up; Shield TV with shield controller + 360 wired controller running KinoConsole to connect to my PC (Radeon) and launch steam big picture mode, this gives access to all of steam.
Then refine steam for local coop + full controller support and profit.
Try this for AMD for mobile use but I only have used Moonlight (open source gamestream client) on android because it is made for the Nvidia stuff so why try the alternative when this one works perfectly fine.

Definitely Kino for AMD. Splashtop is awful for actually trying to game because of the input lag. Kino seems to have the lowest amount of input lag and allows you to actually play games that require some timing.
I've only demoed a small amount of games because the only clear connection my phone could get to the router was my living room but is still definitely superior to splashtop.
Some recommend Kainy and I have tried it.. I just can't remember what made me not like it tbh.. I only used the free version so maybe it had some limitation I couldn't deal with. shrug
There are many ways to stream games on your tablet without the need of an Nvidia tablet or graphics card.
I have the Shield Tablet but my GPU doesn't meet the requirements so I use the KinoConsole app. You can also use Splashtop but I haven't had a good experience with it.

But that should be something like what you're looking for. Not sure how much latency is going to be an issue.

Yes - I have been using kinoconsole with my Shield TV and AMD R9 290 and works with steam big picture mode well enough. Shield controller and XB360 work fine.
Only downside with kinoconsole is that it uses CPU encode but my ageing i5 2500K has no problems.

I know there are emulators for Playstation and SNES, but not sure past there. The asus gamepad, which was designed for the Nexus Player and is very similar to an xbox 360 controller, works well.
You defnitely sound like a power user who should consider the NVidia Shield instead of the Nexus Player. For most people the NP is powerful and versatile enough, but for gamers or heavy power users, you should go for the shield (or stick with Xbox One or PS4)
I did a search for some of the most popular emulator apps on Android, and all of these are listed as downloadable for my nexus player (shows up on the list of compatible devices). However, I haven't played all of these of on the NP. I would be interested if others on here have tried these with any success. I've tried KinoConsole and Kainy. They work, but aren't great. I think I like KinoConsole better, more intuitive interface. It also works with Moga. Kainy wasn't as intuitive, but I believe also Moga compatible. Though, I did use Moga in B-mode on both applications. With both, games that challenged my PC's hardware produced enough lag for the games to be unplayable. Older games that run without issue streamed with pretty low lag.
Limelight is a port of NVIDIA's shield streaming service, but still requires a GeForce video card. I haven't tried this to compare with.

I doubt it since Moonlight is just an open source version of GameStream that streams using the same conditions, but with other devices.
You can try KinoConsole which basically streams whatever is on your computer. You can use Steam Big Picture mode with it.
